Ok, I'm not sure what you really call it. I remember one name and my wife remembers another name. But, I'm looking for a recipe my dad made when I was a kid. It was a casserole dish he cooked in the oven. The casserole was full of potatoes sliced thin and thin strips/chunks of ham. The whole thing was in a orange yellow cheese sauce. He'd cook it in the oven for hours and when it came out it had a crisp brown crust on the top. Everyone would eat it until they were going to bust...
Anyone remember such a recipe? If you do, would you care to share it?

I make something very similary - spray dish with Pam, layer slices of potato and ham chunks and a little thinly sliced or diced onion. Then dilute a can of Campbells Cheddar Cheese soup with some milk, pour over and bake 350 degreees for about 45 min. or till done. It's simple. I've even 'jump-started' it in the microwave to get it cooking and then put it in the oven to finish it off. I've also used Cream of Celery and sometimes Cream of Mushroom soup if I didn't have the cheese soup and then sliced some cheese over it.

Potatoes baked with cheese are au gratin potatoes.
If I'm being too lazy to make it from scratch, I use a box mix for au gratin potatoes. I just follow the directions on the box and add cubed ham and usually some onions and broccoli. I usually make it in the crockpot.
Like most other things, it's better from scratch though. But the box mix is convenient in the camper.

Yummm, the thought brought back memories of who got the crispy stuff left on the side of the baking dish!
here goes what I have:
Ham & Potatoes Au Gratin
1 1/2 c. diced cooked ham
3 c. sliced cooked potato
4 tbsp butter
1 med. chopped onion
3 tbsp flour
2 c. milk
Salt & pepper to taste
1/ 2 c. grated sharp Cheddar Cheese
Layer the ham and potatoes in shallow 1 1/2 quart baking dish. Melt the butter in sauce pan. Add onion and cook till golden. Blend in flour; add milk gradually and cook, stirring constantly till thickened. Season with salt & pepper. Pour over ham/potato mix and sprinkle with cheese. Dot with remaining butter. Bake at 400° for 20-25 min. Serves 4 generously.
or... you can google the recipe and find other ways of doing it.. I like this one done in a crock pot:
Scalloped Potatoes
I use a baking dish about 5 inches deep & about 18 inches in diameter
Peel and slice the potatoes and place them in the baking dish mixed with a peeled & sliced
onion.
Sprinkle with salt, pepper, a little flour and (optional) some chunks of cheese.
Pour in about 2 inches of milk.
Place sliced ham on top.
Cover and bake til the top is browned.
We made a dish tonight and it turned out pretty darn good.
We sliced up a few potatoes (enough to fill a big casserole dish), sliced a medium sized yellow onion, diced 2 pounds of ham, 2 pounds of shredded cheese and mixed it all up in layers. Once that was done I added enough milk (skim was what we had) to cover the bottom 1/4" of the dish. Covered it with tin foil and stuck it in the oven at 400 degrees for about an hour. I kept checking the potatoes with a tooth pick too. Than we ate it while it was nice and hot with lots of sour cream as a topping... Everyone ate a lot of it! It was good. But, it wasn't what my dad made when I was a kid... I plan to have more tomorrow but I think I might add some chives to the sour cream too.
