If you need more recipes for all your apples you need to use up, try this recipes. It is really easy and good.

Apple Cobblestone Pie

pastry for 9'' pie (one crust)

Filling:
6 to 10 medium apples, peeled and quartered
1/2 cup sugar
3 tablespoons flour
1/2 teaspoon cinnamon

Topping:
2/3 cup coconut
1/4 cup sugar
1/4 cup flour
2 tablespoon softened margarine

Heat oven to 375. Line 9'' pie pan with pastry, combine all filling ingredients, mix until apples are well coated. Arrange apples rounded side up in pastry lined pie pan, placing close together to resemble cobblestones. Sprinkle any remaining sugar mixture over apples. In medium bowl blend all topping ingredients until crumbly. Sprinkle over apples. Bake for 45 to 50 minutes or till apples are tender.

*If you only have large apples; cut each into 6 pieces.

Wow - you ALWAYS post the best recipes!!!! I have never had anything with apples and coconut together before - never thought to try that. I will definitely be trying this right away. Our big old apple tree has had some great apples on it this year - the best we have ever had since we moved here. My husband LOVES apple pie and this is a tasty sounding new "twist".
My compliments to you CHEF!!!!
