Here is something that has been around for awhile and is soooo good. Better have something cold to drink with these.


ARMADILLO EGGS (Stuffed Jalapenos)
Yield: 15 servings

1/2 lb Monterey Jack Cheese
1/2 lb Sharp cheddar cheese
1/2 lb Hot pork sausage*
1 & 1/2c Bisquick mix
1 Egg
1 pk Pork flavor Shake 'n Bake
20 Whole jalapeno peppers**

*Jimmy Dean Sausage brand is best **Use 20-30 peppers-should use fresh, but success reported when using bottled or canned. Slice peppers in half lengthwise and scrape out all the seeds (wear gloves). Try to keep both halves near each other as you have to put them back together later. Mix Bisquick, raw sausage & cheddar cheese. Stuff each pepper with Monterey Jack cheese and put the halves back together. Grab a handful of Bisquick mixture and mold around pepper in shape of elongated egg. Use enough to cover pepper well. Dip armadillo egg in beaten egg and roll in Shake ‘n Bake.
Bake on broiler pan (can use cookie sheet) at 350 degrees for 25 minutes or until crisp. These are delicious appetizers and have a number of possible variations.

CAUTION: Never touch hands to nose, eyes or mouth after handling or eating hot peppers. If possible, protect yourself by wearing thin rubber gloves for extra protection. Wash hands thoroughly with soap and water when finished (a mild bleach solution works even better). The substance that makes a chile so hot is capsaicin. In order to douse the heat, try drinking milk, or eating ice cream, or yogurt. These dairy products are especially effective at breaking down the oils. Eating a starchy food like bread is good also, but beer and water only spread the flame!

Jim,
I have made a version of those too. Instead of breading, wrap a piece of bacon around the pepper, add a toothpick and grill until the bacon is cooked.
Something about the smoke flavor from teh grill that intensifies the flavor.

If we are ever in the same area, we will have to cook! I know my hubby will appreciate it, and I am sure whom ever else is there will too.

Keep the ideas coming.....

That sounds great. I like bacon, but my Doctor doesn't like me getting the cholesterol.

I also failed to mention that some of our local grocery store deli's
sell something similar with only Monteray Jack cheese inside the jalapeno. I get those sometimes and they are good also.

Thanks to you, I will now try Armadillo Eggs; I really love hot foods and apply reasonable shots of habanero to many otherwise tasty treats . Made the Picked Beets and Eggs, and was looking for something next to amaze the wife. She was really amazed by the pickled beets and eggs...at how I can consume something that smells so foul, says she. Oh, the PB&E are wonderful.

Try Habenero & wipeing eyes. Ya won't forget soon.
A lady friend makes hers with Chicken Salad, using regular Japenos & some battering & deep fat fry. She baked some for me, with Chicken Salad left over from a dinner.


Take up RV'ing. Don't be one that said, Wish I could, wish I had, wish I did that too. We don't know what is around the next bend in the road of life.

Thanks for the great recipe. Between Bastop TX and Elgin TX is a tiny shed that sells these bacon wrapped by the handful and I can't get enough of them.
