This is a recipe I use for pot lucks, and family get togethers. Nobody ever gets enough. It's like an flat, open faced eclair. you can also make the crust a day or two ahead of time and make the filling at the last minute.
Ingredients:
1/2 c. butter
1 c. cold water
1 c. flour
1/4 tsp salt
4 eggs
2 small boxes instant vanilla pudding
1 block cream cheese
2 c. milk
1 tub Cool Whip (regular size)
chocolate syrup
Directions:
In medium saucepan melt butter. Add water, bring to a boil, add flour all at once, stir. Cook till mixture forms a ball that doesn't seperate. Remove from the heat and cool five minutes. Add one egg at a time, beat with wooden spoon till smooth between each egg. Spread batter thinly onto a greased cookie sheet. Bake at 400 for 30 minutes or till golden brown. Cool. When cold, mix the two boxes of pudding, cream cheese and the two cups milk with electric mixer till smooth. Spread over cooled crust, top with Cool Whip and drizzle with choc syrup.
