I can't help but notice an increase in new topics for Cooks and Connoisseurs - it is fall and our thoughts turn to food!! Having received the premiere issue of Cottage Living, I want to share the recipe for Oatmeal Cookies - they are wonderful, lots of butter makes them chewy.
New Old-fashioned Oatmeal Cookies
Makes 3 dozen
1 1/4 c butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 large egg
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
3 cups uncooked quick-cooking oatmeal (I used old fashioned, and it worked just fine)
Preheat oven to 375 degrees
Beat butter and sugar til creamy, add egg and vanilla, beating well. Add flour and soda, salt and cinnamon, stirring well, add oatmeal and stir well. Bake on well oiled cookie sheets for 10 minutes. Let cool 2 to 3 minutes and remove. This recipe suggested sandwiching 2 together with vanilla frosting in between. Awesome!

If you want to kick them up a notch just add chocalate chips.

I agree there are lots of variations on oatmeal cookies, to include chocolate chips, raisins, etc. IMHO, having tried many and having used various recipes, I would avoid the additions for this particular recipe. Due to the high amount of butter which creates a pretty delicate cookie, I think the additions would overwhelm it. But please do whatever will float your boat.

If you add raisins, soak them in spiced rum for an hour or so first or you can microwave them for minute (just till they are warm) in the rum and they will soften and have a nice flavor.

That recipe is the same as the one on the lid of the Quaker Oats Old Fashion Oatmeal box. Only difference is it uses two eggs and a whole tsp of cinnamon.

And if you don't need the 3 doz. cookies immediately. Drop dough into a ziplock bag, shape into a log and freeze. Slice and bake cookies as needed. Have done this for years with this recipe with great success. Cookies are well on their way by the time the coffee maker in the MH is done. Irresistable!
