1 lb. hamburger
1 onion, diced
1 tsp. garlic powder
2 (8 oz.) cans tomato sauce
1 (7 oz.) pitted ripe olives
1 c. cottage cheese
1 c. sour cream
1 can chopped chilies
1 lb. Monterey Jack cheese
1 pkg. nacho or taco Doritos
Fry hamburger with onion and garlic powder until browned and crumbly. Add
tomato sauce and slice ripe olives. In a separate bowl, mix cottage cheese,
sour cream and chilies. Grate Monterey Jack cheese. Slightly crush Doritos
and line 3-quart casserole with 1/3 of them. Cover with half of hamburger
mixture, then half of cottage cheese mixture, then half of Jack cheese.
Repeat layering.
Bake at 350 degrees uncovered for 45 minutes.
I have a TexMex file with about 200 recipes. An unpublished book on chili with 100 chili recipes, a file with about 1200 recipes from around the world I got from a club run by a lady in Australia. I also have a few notebooks with hard copies of various recipes I collected before I started saving everything on a computer.
The recipes on my computer are fairly easy to pinpoint, but the others are a pain for me to locate a particular recipe. One of these days I will stop my procrastinating and catalog the old stuff from my notebooks.
