I was just browsing through my files and this looks good. I haven't tried it yet, so let me know how it is if you try it.


Mexican casserole

1 lg. bag Doritos
1 lb. hamburger
1/2 med. onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 sm. can taco sauce (4 oz.)
1 sm. can green chilies, chopped
Longhorn cheese, grated

Brown hamburger with onion. Mix in soups. Add taco sauce and chilies. In large casserole crush Doritos in bottom of dish. Layer meat mixture and cheese. Repeat until all is used. Bake at 350 degrees from 45 minutes to 1
hour.

Variation: Substitute 1/2 cup milk for the mushroom soup, and prepare as above; however, place a layer of Doritos in bottom of casserole and put one half of meat mixture over it. Put another layer of Doritos and top with remaining meat mixture. Cover with shredded cheese.
Bake at 375 degrees for 20 minutes.
Serves 6.
Freezes well.

Been making this for more than 20 years. Yes it is good, and easy to make ahead of time, freeze and take with you on vacation.

You Texans sure know how to eat good. One question I have on this recipe is about Longhorn cheese. Hope I can find it locally and is there a good substitute if I can't?

I am probably wrong but I think Longhorn is a type of Cheddar.

thank you so much! I can't wait to try it!
I love, love, love Mexican food. When I can get it.
Up here in the north, we don't have many mexican restaurants....a chinese take out on every corner, but the mexican restaurants are few and far between. I can think of two in my area.
So, I am always looking for a good mexican recipe for a family. We get tired of "taco night". LOL
I suppose I could add some hot sauce to this recipe, right?

Longhorn is a type of cheddar and any mild cheddar would work.
