OK, I don't normally bake cookies. My husband and I lead a low-carb lifestyle and haven't eaten home-baked cookies in over 2 years.

We belong to the ELKs club and I have signed up to bake cookies for the local Veterans home during the month of June. I need to bake a lot of cookies (about 12 dozen). Can someone offer a few recipes that are tasty, not too time consuming and not terribly expensive.

I have recipes for the usual peanut butter and chocolate chip, but would really appreciate your help!

Snickerdoodles are always a hit!

Mix together thoroughly ....

2 Cups Soft Shortening
3 Cups Sugar
4 Eggs

Stir in ...

5 1/2 Cups Sifted Flour
4 Teaspoons Cream of Tartar
2 Teaspoons Soda
1 Teaspoon Salt
Instructions ....

Chill Dough for 1-2 Hours.
Roll into balls the size of walnuts.
Roll balls in mixture of sugar and cinnamon.
Place on cookie sheet.

Bake at ...

400 degrees F.
8-10 Minutes.
Bake until slightly brown.
Let cool a few minutes.
Remove to cooling rack.
Makes about 8 dozen 2 1/2" cookies.

If you want a BUNCH of cookies FAST, you need to think BAR COOKIES! Each large batch can bake all at once and then be quickly cut into squares. Here's a SUPER cheap, easy recipe that gets raves every single time I make it.

PRALINE STRIPS

* Graham Crackers
* 1/2 cup butter
* 1/2 cup margarine
* 1 cup packed light brown sugar
* 1 cup chopped pecans
* 1 teaspoon vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees F (180 degrees C).
2. Line cookie sheet with foil and spray lightly with cooking spray. Cover bottom of pan with a single layer of graham crackers.
3. Bring butter, margarine, and sugar to a boil for 2 minutes. Add pecans and vanilla.
4. Pour over crackers; spread evenly.
5. Bake for 10 minutes. Cool a little, then cut (while still warm) into squares.

Here is another one that's been a hit for me. I got it from a girlfriend, and I have no idea where the name came from.

CONGO BARS

* 2 cups sifted all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2/3 cup shortening
* 2 1/4 cups packed brown sugar
* 3 eggs
* 2 cups semisweet chocolate chips
* 1 cup chopped walnuts
* 1 teaspoon vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees F (180 degrees C).
2. Melt shortening, stir in brown sugar. Let cool.
3. Beat in the eggs.
4. Add dry ingredients.
5. Add chocolate chips, nuts and vanilla.
6. Pour in 9 x 13-inch pan and bake for 30 minutes. Cool and cut into squares.

These cookies really make a HUGE batch but as it says at the end you can cut the recipe in half if you wish. They are quite tasty actually.

MONSTER COOKIES

1 lb. butter
4 c. sugar
2 lbs. brown sugar
3 lbs. peanut butter
1 dozen eggs
1 lb. M & M's
8 tsp. baking soda
1/4 c. vanilla
18 c. quick oatmeal
1 lb. nuts
1 lb. chocolate chips
Mix all ingredients together well. Use an ice cream scoop for monster size cookies and bake 20 minutes at 350 degrees. For regular size cookies bake 12 minutes.




Oatmeal Toffee Cookies

Cream together:
1 c butter or margarine
3/4 cup brown sugar
1 t vanilla
3/4 c white sugar
1 egg

Add:
1 1/2 c flour
1 t soda
1 1/2 c oatmeal

Stir in:
1 c skor toffee bits
1 c chocolate chips
1 c dried cherries
(You can skip the dried cherries but need to add 1/4-1/2c extra flour
Bake at 350 degrees for 10-12 minutes

I bake Shortbread Cookies and Amish Sugar Cookies for Christmas.

Shortbread cookies, a pound's worth of butter will completely cover a 1/2 sheet pan and will give you at least 40 really nice sized cookies. Best part is all you need is flour, butter, and sugar.

The Amish Sugar Cookies will net you about 50 cookies for every 1/2 pound of butter. They bake up really fast. 8 to 10 minutes, so at 6 or 8 cookies per sheet, it goes quite fast.

Both recipes can be found online.

These are thin, crisp and have a delicious flavor. Be sure to use Crisco and NOT butter! You can use colored sugar for the flattening step, which makes them festive-looking.

Oatmeal Walnut Thins
Preheat oven to 350*.

1 cup Crisco
1/2 cup brown sugar
1 egg
1 1/2 cup flour
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 cups quick oats
3/4 cup chopped walnuts
1 tsp. vanilla

Cream the fat and sugar together and beat in the egg and vanilla.
In another bowl, stir the dry ingredients together until well mixed and add gradually to the Crisco mixture, stirring well until incorporated.
Drop by spoonfuls onto a cookie tin. If you want them pretty, roll the balls of dough lightly between your palms and put back on the tin. Butter the bottom of a small drinking glass and, dipping it in sugar for each cookie, use it to flatten and sugar the tops.
Bake for 9 to 10 minutes and cool on racks.

These are my favorite cookies and they couldn't be easier to make.

Bakeless Chocolate Oatmeal Cookies

Melt together in a medium saucepan:
1 stick (1/2 cup) butter or margarine
4 tbsp. cocoa
1/2 cup milk
2 cups sugar
Stirring constantly, bring to a boil. Boil for about 1 minute, remove from heat.
Add:
1 tsp. vanilla extract
1/2 cup crunchy peanut butter
3 cups oatmeal
Mix thoroughly
Spoon onto wax paper (Makes about 3 dozen)
Cool until hardened.

No-Bake Chocolate Cookie Triangles

Prep Time: 10 min
Total Time: 3 hr 10 min
Makes: 16 servings, 2 triangle each


1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate
3/4 cup (1-1/2 sticks) butter
20 NILLA Wafers, coarsely chopped (about 1 cup)
1/2 cup PLANTERS Chopped Pecans

MICOWAVE chocolate and butter in large microwavable on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted. Add chopped wafers and pecans; mix well.
SPREAD into greased foil-lined 8-inch square pan.
REFRIGERATE 3 hours or until firm. Cut into 16 squares to serve, then cut each square into 2 triangles.


Great Substitute
Substitute 1 cup coarsely chopped NUTTER BUTTER Peanut Butter Sandwich Cookies or OREO Chocolate Sandwich Cookies for the chopped NILLA Wafers.
