Pineapple Bread Pudding

1 loaf French bread
3 beaten eggs
1 tablespoon cinnamon
1 cup crushed pineapple,do not drain
1/4 teaspoon salt
2 cups milk
1 teaspoon vanilla
1 cup sugar
1 cup raisins, optional, I didn't use
1/2 cup butter, melted
1/2 cup chopped pecans, optional, I used

Break bread into small pieces and place in a large glass bowl. Pour milk over the bread and let it soak 15-20 minutes. After soak time mash the bread to remove any lumps.

Add the rest of ingredients and mix well.

Pour into a buttered 8-9 inch square pan and bake for 45 minutes at 350° until set in the middle and lightly browned on top.

Delicious hot or cold and can be served with a topping of sweetened whipped cream, bourbon sauce or Grand Marnier.

I had some golden rolls, bought at Sam's, left from Easter dinner and I used them in place of the French bread and it is very good. Haven't tried any of the toppings yet, made it after breakfast and plan on warming for supper. Will make the whipped cream then.

Hi KLO,

We're getting ready to head out camping and we were going to make brownies, but this recipe sounds to good not to try! Thanks for sharing.
