I've made blue cheese burgers before, but tonight I tried a new recipe. These could possibly be the best burgers I've ever made! I cooked these on the Cobb and smoked them with mesquite chips. Tooooo tasty!
Blue Cheese Burgers with Red Onion
1 lb. lean hamburger
1/2 c. (2 oz.) crumbled blue cheese
1/2 t. garlic salt
1/8 t. cayenne pepper
4 1/2" thick slices red onion, brushed with olive oil
4 rye burger buns
2 T. mayo
Lettuce
Tomato slices (optional)
Gently mix first five ingredients till well blended. Shape into four patties. Grill till thoroughly cooked, turning once. During last ten minutes of cooking time, place onion slices on grill and cook till tender, turning once. Toast buns the last two minutes of cooking, if desired. Spread 1/4 of mayo on each of the buns, add a burger, slice of onion, tomato, and lettuce. 4 servings. Per serving: Calories, 450. Fat, 28 g. Sat fat, 10 g. Cholesterol, 85 mg. Carb, 23 g. Fiber, 3 g. Protein, 27 g. Dietary exchanges: 1 1/2 starch, 3 medium-fat meat, 2 1/2 fat.
We had this with the Honeydew Salad Wedges I posted elsewhere on this forum. It was a great accompaniment.

Silly me. I love bluecheese burgers, but hardly ever make them because I always thought it was too much trouble to stuff the patties with the cheese. Never thought of just mixing it in.
I'll certainly give your recipe and more importantly your technique a try the next time I bbq burgers.
PSIguyy, the blue cheese I used was a brand I hadn't tried before. It seemed dryer than what I usually have, and it melted less. I'm not a cheese expert so I don't know how to tell the difference before buying or even if you can. Also, we've been using the regular charcoal lately instead of the matchlight kind. I think it burns at a lower temp. That would also help keep the cheese from melting away, or on a gas grill just turn the flame down. Or maybe use indirect grilling. I've made stuffed blue cheese burgers in the past too, and it seemed like the cheese just melted away, or else it was just a liquid inside the burgers. This recipe worked out much better.
At any rate, we loved those burgers and they've jumped right up to the top of our favorite meals list, for home and camping.
