This is a favorite with our family.....

2 cups sugar
2 1/4 cup flour
1/2 tsp salt
1 1/3 tsp baking soda
3/4 cup oil
1 tsp vanilla
3 eggs
1 cup chopped walnuts
4 ripe bananas

Preheat oven to 350°. Mix well sugar, flour, salt and baking soda. Mix oil, eggs and vanilla, combine with dry ingredients. Dough will be pretty stiff. Mix in mashed bananas and nuts. Prepare bundt pan or 3 loaf pans (spray with Pam and coat with sugar (not flour) Bakes till toothpick comes out clean and golden brown, usually a hour to hour 10 minutes.

Note: Mix all this by hand....prep time is about 15 minutes.

Sango try replacing the vanilla with almond extract. You won't believe the improvement. (JMHO)

This is very similar to mine

Tho, I substitute pecans in everything. If I eat a walnut, I will fall over...dead
