We've been living a low-carb lifestyle for over 2 years now --but we enjoy going to the campground and gatherings "potlucks".

Can anyone offer some good tasting, low carb (not no carb), recipes that will feed 8 hungry campers without putting us in the poor house??

We have some good breakfast and luncheon recipes, but we're looking for the "fills 'ya up dinner" ideas. Thanks!

Here is one that sounds good,but haven't tried it yet. There is a website Lowcarbfriends.com that has a recipe room with loads of great recipes,some have reviews.

Sinful Chicken Enchilada casserole
Description: this is Awesome.Tastes as good as the real thing.I could eat it everyday.
Ingredients: 4 boneless chicken breasts(cut into bite size)
1 jar Enchilada sauce
1 pkg cream cheese
3 cups cheddar(shredded)

How To Prepare: Cut chicken and fry in 2 tbsp oil.Add enchilada sauce,1c.cheese,and all of the cream cheese and stir until melted and bubbly.Put into 9by13 cake pan.Cover with 2 cups cheese and put in 400 degree oven until cheese melts.Top w/sourcream,hotsauce,and guacomole.Serves 8

Carbs per serving (including complete nutritional information if known): 3
Preparation Time: 15 minutes
Effort (Easy, Average, Difficult): Easy

Here is another one-my sisters favorite,just leave off the bread crumbs to make it low carb,don't have the carb count on this one though:
Everybody' got room for seconds-casserole.

2 l3 oz cans Members Mark Chicken (Sam's Brand)
4 cups frozen broccoli cuts,cooked
1 can condensed cream of chicken or mushroom soup
3/4 cup mayonnaise, 1 teaspoon lemon juice, 1 teaspoon curry powder,
1/2 cup shredded cheddar cheese, bread crumbs

Layer broccoli in a 7X11 baking dish. Top with chicken. In a separate bowl mix soup and mayonnaise, lemon juice and curry powder. Spread thesoup mixture evenly over chicken layer. Finish by sprinkling cheese on top and adding a light layer of bread crumbs. Cover and bake for 1 hour at 350. Yield: 6 sevings. Prep time: 10 minutes.

We love Dreamfields low carb pasta! (5g carbs per serving!) It tastes like regular pasta and comes in five different shapes. I buy mine at a certain discount chain that has blue bags and offers free camping, I mean parking! Perfect for adapting that famous tuna noodle casserole valued by pot luck attendees everywhere! I love to make pasta salad with it. With meat and cheese it's a meal in itself. It makes lovely baked penne with meat sauce as well.

Traditional quiche omitting the crust makes a great low carb dish as does a nice antipasto plate with cheeses, meats, olives and other Italian vegetables. Another favorite is a fresh stirfry with lots of low carb vegetables. ( Carrots and onions should be used
sparingly) Campbell's makes a low carb chicken and broccoli soup that together with steamed broccoli, cubed chicken and cheese make a nice casserole.

Tortilla soup made with low carb tortilla chips is popular. Just adapt the recipe so that there is more chicken,green peppers and tomatoes and less of the higher carb pinto beans and corn that I used to use. I use a third of a can for each and freeze the rest.

A big mixed salad like Caesar with shredded parmesan and grilled chicken breast is appreciated by lots of people watching their weight. It's one of our favorite dinners!

Maybe you'll like this; serves 4-6

1# - Kielbasa (smoked sausage)
1# - Broccoli florettes
1# - Frozen Cut Green Beans
1 or 2 - Chopped onions
1 or 2 - Chopped Bell Peppers

slice kielbasa in about 1/4" pieces
fry in elec. fry pan w/ 1 cup water for appx. 10 minutes.
Add remaining ingredients & simmer 20 - 30 min., stirring occasionally.
(optional) Melt your favorite cheese on top.
