1/3 cup all-purpose flour
2 2/3 cups low fat milk
3 oz. Swiss or Gruyere cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 cup sharp cheddar cheese, shredded
6 cups cooked macaroni 3 oz. light processed American cheese (Velveeta)
1/4 tsp. salt
vegetable cooking spray
1/3 cup crushed melba toast
1 Tbsp. reduced calorie margarine, softened
While this low fat version of Macaroni and Cheese doesn't exactly give you free reign in eating this comfort food (its still 350 calories for a measly cup), at 29% of calories from fat, you're still better off indulging in this over many of the old fashioned recipes.
Preheat oven to 375° F. Place flour in a large saucepan. Gradually add an equal amount of milk, stirring with a whisk until smooth. Add remaining milk, whisking constantly. Cook over medium heat until thick (10 minutes), stirring constantly. Add cheeses; cook until cheese melts, stirring often. Remove from heat; stir in macaroni and salt. Spoon mixture into a 2 quart casserole dish coated with cooking spray. In a small bowl, combine toast and margarine. Sprinkle over macaroni mixture.
Bake until bubbly (30 minutes).
