Debbie's (ol'blue's) post on the Melt in Your Mouth Peanut Butter Cookies (which are absolutely scrumptious!) made me think of this recipe... these also melt in your mouth, and a single batch will not be enough!

WHIPPED SHORTBREAD

1 cup soft butter (not margarine)
1/4 cup corn starch
1/2 cup icing sugar
1 1/2 cups all purpose flour.

Place butter in bowl. Sift in other ingredients. Mix well with electric beater at low speed until blended. Turn to high speed until dough resembles whipped cream. Drop by spoonfuls onto ungreased baking sheets. To make them festive looking for Christmas, top each cookie with a maraschino cherry (I cut them in half, and put a half on each). Bake at 325F for 20 minutes.

Oh, I will be making these today. My family just loves shortbread cookies. I will let you know how they like them. Thanks for sharing.

Confectioner's sugar, or powdered sugar. (Guess Americans call it something different than us Canadians do...)

I have the same recipe as this and they are the best!! I put red & green sprinkles on them.

Terry,

These cookies are just wonderful... They melt in your mouth. So easy to make. I would defiantly double the recipe, as they don't last long. I will be making these at Christmas.
I put on some red and green sprinkles on some of my cookies to show everyone here what they would look like at Christmas time. Thanks for sharing your recipe.
