I had a litttle pineapple left over after making carrot bread and found this recipe to try. I thought it was pretty good ~ the mayo added a different taste!
Cranberry Foam Salad
1 (3oz) package strawberry jello
1 cup hot water
1/2 cup mayonnaise
1/2 cup pecans,broken
1/2 cup crushed pineapple,drained
1 (16oz)can whole cranberry sauce,drained
Dissolve jello in hot water.Chill until it starts sticking to the side of bowl and is the concistency of eggs whites.Blend mayonnaise into jello with beater or whisk.Add pineapple,cranberry sauce,and pecans. Stir well,pour into mold.Makes 8 servings
Note:I usually make this with sugar free jello,light mayo and pineapple in its own juice for those of us that need/want to cut calories!
Oh,I make this all the time,not just for the holidays,its good with pork too. I have family members that would never even eat cranberry sauce that love this.I also try to keep the ingedients for this in the rv at all times,its a quick and easy spur of the moment potluck dish to make.I also use sugar free jello and pineapple in its own juice.
