This is really good and easy to make. Enjoy! Debbie

Surprise Lemon Cake

1 package lemon cake mix
1 (12 oz) jar orange marmalade
2/3 cup flaked coconut
1/4 cup butter, melted

Preheat oven to 350. Generously grease and flour a bundt pan. Combine marmalade, coconut and melted butter in small mixing bowl. Spread over bottom of bundt pan. Prepare cake following package directions. Pour batter over marmalade mixture. Bake at 350 for 50 to 55 minutes or until toothpick inserted in cake comes out clean. Cool in pan 10 minutes. Invert cake onto serving plate. Cool

Ok Debbie, must pass this along from my SIL. She says to STOP they are on a diet. LOL Everytime you post something with pictures that we would both love, I send her the recipe and we both enjoy it. Her in AR and me in In. So thanks for posting this lemon is one of my favorites.

This is another "gotta do" from Deb. Thanks. DW is diabetic and cannot eat such, but I can and will make this weekend. I love the marmalade part and am wondering about substituting crushed pineapple for a variance. YUM>
