There was a thread recently about sweetened condensed milk and someone posted on that thread about making Dulce de Leche. I've been cooking and baking for quite some time now and I have to confess I'd never heard of Dulce de Leche before.

Then I heard it mentioned on Food Network Channel twice and a friend mentioned tasting it recently too. I decided I had to give it a try and went searching for a recipe. After reading several recipes, I decided to try making it in my crock-pot. I got wonderful results. Below please find my recipe for making Dulce de Leche.

If you have a recipe for making Dulce de Leche or using Dulce de Leche in a recipe, please share!

Dulce de Leche

You can make as many cans of this at one time as you like, as long as they fit into the crock-pot. Leave ample room, so cans are not touching one another. I just made two cans.

Remove the labels from each can of sweetened condensed milk (not evaporated milk). Place unopened cans in crock-pot and cover with hot water. Place lid on top and turn on crock-pot on high for two hours. Turn cans over and simmer in hot water another two hours (4 hours total). Remove cans from water and allow to cool for about 30-40 minutes before opening and using.

I used the Dulce de Leche on a sundae and it was delicious. It had sat on the counter for well over an hour and it was still warm. Hmmm, was it ever good.

Then I mixed up some brownies and after pouring the batter into a 9 x 13 pan, I poured a can of Dulce de Leche into the batter and swirled it around before baking. It turned out really pretty and taste marvelous.

If you have a recipe to make Dulce de Leche or what you use Dulce de Leche for, please share.

I'd love to get a pie recipe for Dulce de Leche. I'm thinking an Apple Dulce de Leche pie might taste better good!

I posted a recipe a few weeks ago that you might be interested in. I use one can sweetened condensed milk and heat in water similar to what you described (only I do it in the pressure cooker).

After it's "cooked" and the can is cool enough to open, I put the condensed milk in a large bowl and add:
l stick melted butter
1 package powered sugar (sifted)
With your beater, beat until it is thoroughly mixed. Makes a WONDERFUL Caramel frosting for a cake.

I do not know if you have O'Charley's restaurants where you live but their Caramel Pie is a can of the eagle brand caramalized. Glad to hear about doing it in the crock pot. For the pie you need the small tart graham cracker shells, caramel eagle brand, Cool Whip, mini choc chips and chopped walnuts. Pour caramel in tart shells, cover with cool whip, top with mini chips and chopped walnuts. Very rich dessert, but oh so delicious.

Boiling cans of Eagle Brand has been around for a LONG time. I have a recipe booklet from my grandmother, I am almost 60 now so it has been around a long time, that gives the recipe for "Magic Caramel Pudding." It told us to place one or more unopened cans of Eagle Brand Sweetened Condensed Milk in a kettle of boiling water and keep at boiling point for 3 hours. CAUTION- Be sure to keep can well covered with water.

This booklet doesn 't even have a publishing date on it just a serial no. of 9-37-E-755. I don't know if that means it was published in 1937 or not but it's possible. Lots of good stuff in it but sure is fattening!

I think your method is safer, don't have to stay close to keep water at the right level.

there was a great recipe here for Flan Cake which i think used sweetened condensed milk, and I did a search and can't find it.....

Recipe origin: Argentina

Ingredients

* 1 can sweetened condensed milk

Procedure

1. Preheat oven to 425°F.
2. Pour the sweetened condensed milk into an 8-inch round pie or square cake pan, and cover it with foil.
3. Place the pan in a shallow pan filled with one inch of water. Bake for one hour.
4. Allow to cool; eat with bananas or as a cookie filling.

Sounds yummy!

We make ours by boiling a can of sweetened condensed milk in a pan of boiling water for ~3 hours... don't forget it overnight, or you will hear a loud noise, and need to clean the walls and ceiling of your kitchen. It might be stronger than Eternabond.

We just enjoyed dulce de leche with media lunas (half moons... small warm croissants) while camping on the Olympic Peninsula this weekend. When we were in Argentina, there were restaurants that only served this combination, and people were lined up out the door.

Nestle make a pretty good canned dulce de leche, that can usually be found in the Mexican food section of grocery stores.
