I have been dyeing to try smoked meat loaf after seeing some of the photos I've seen in earlier post. I'm having a problem locating the proper pan to smoke it in. Do you put water in the drip pan?

I usually have a bucket of hickery chips in a bucket of water overnight and sprinkle them on the coals and cook indirect heat. works for me.

If your smoker comes with a pan, use it. It is not for steam or humidity--it is a "heat battery" to help reclaim temperature after the lid or door has been opened.
For meatloaf, I would recommend either molding it and letting it sit on foil on its own, or using a foil loaf pan. Pierce the foil or the foil pan to let fat escape and to keep the meatloaf intact. Smoke at 225F to an internal temp of 160F. You can put a few slices of raw bacon on top for flavor.
Remember-a few smaller ones will be better and faster than one big one. Count on 3 hours smoke time.

I ordered a meatloaf basket specifically for this purpose. It is made of stainless steel wire mesh. I just give it a good coat of Pam before I gently place the raw meatloaf in the basket. I ordered it from the Brinkman website quite a few years ago.

Thank you, that is what I was looking for. Brinkman also has a good number of recipes listed.

This is one of a thousand recipes--just make sure your peppers/onions etc aren't chopped too big--they will make the ML fall apart. You can add/subtract just about anything you want.
1 lb. ground sirloin
1 lb. ground pork (the pork was my idea, not in recipe)
2 eggs
3/4 cup water
3/4 cup ketchup
1 package lipton onion soup mix
1 green pepper - sauteed
rubbed ketchup all over it.
