Made the trip from Bakersfield last summer. I took pictures of the campgrounds and posted them in my 'Diesel Place' garage. Each of the pictures are annotated. Just click on them to read the description.
We are going in first part of June. Had the same questions about mountain driving as this is our second long trip. Feel better about replies to yours, "Not white knuckle."
We are gone for two weeks. Mostly KOA and Flagg Ranch at South Entrance.

Do you mean a recommended driving route? Looks like 80 east to 93 north to Twin falls, then 84 E to 86 E to the I-15 N to HWY 20 to West Yellowstone and into the park.

How hard is it to get reservations in the summer? Is it going to be mission impossible? I'd prefer to camp out at a central location for the duration (7 nights, most likely). Any recommendations appreciated.
Also, I'd like to see Great Salt Lake. How far is that detour? Any recommendations on that?

The best place to see the Great Salt Lake is at Antelope Island State Park. It's about 20 minutes off of I15. You drive out across the lake on a 7-mile causeway to reach the island.
There are white sand beaches, rest rooms, showers, beach picnic areas, a campground and a visitor center. Hike to the top of buffalo point for a breath-taking panorama of the lake and the Great Basin.
Wildlife on the island include mule deer, pronghorn antelope, coyotes, bobcats, badgers, porcupines, jackrabbits and about 600 bison.
Regarding camping at Yellowstone, by far the best campsites in the park are first come. I camp there ever year and usually only get reservations for the first night in the park. Very early the next morning I drive to the campground I want to stay in, park at the entrance and walk through talking to the campers. I politely ask if anyone is pulling out that morning and if they would mind if I put my tag on the spot. I usually leave a cheap folding chair to seal the deal, then I take a walk until they pull out.

If you poop out before Provo on the way up or it fits your itinerary better, the KOA in Fillmore, Utah is very nice for a stopover. Clean, nice views of the mountains, lots of trees. We are doing the same trip late summer--Bakersfield to Vegas, to Fillmore, to Idaho Falls, to Gros Ventre campground in GTNP, then Coulter Bay, then Red Rocks campground near West Yellowstone. A little slower than you want, but I don't like long drives.
