I totally agree, but the OP asked for recipes she could cook OUTDOORS. There seems to be a lot of INDOOR cooking answers being posted. What about grilling ideas?

There isn't one thing that has been listed that can't be cooked OUTSIDE on a grill over the campfire, on a BBQ grill, or on a campstove. I have made just about all of them at one time or another (except I substitute bean with bacon soup for the tomato soup!)

You're absolutely right about that -- however, I just don't think of those kinds of meals as "grilling ideas". I guess it's because we almost exclusively dry camp. When we're camping I try and use as few dishes (especially pots & pans) as humanly possible. Grilled cheese and soup may be simple to make, but I see as TWO pans to wash! The only time I've ever make something like that for dinner would be in the pouring rain, and I'd make them indoors...LOL! That's just me, I know. That's why I can't get in to dutch oven cooking either. For us it's kabobs, grilled meats and veggies, hobo packets, foil wrapped corn, potatoes, etc. Anything that I can prepare without pots is a HUGE plus as far as I'm concerned.

Now, I'm sure my Pie Irons would make a darned good grilled cheese...I'll have to give that some thought...LOL!

How about foil packets. I have done fish and chicken in foil. I have also made potatoes and cheese, onions in foil. You can do veggies as well.

We have a dutch oven and do all kinds of things over the fire. potatoes, stews, biscuts, deserts, eggs for breakfast burritos.
We also have a LARGE frypan we use. And both work ok on a charcoal grill of the correct size.
Biscuts and gravy are a smash hit at our camp site.

BBQ-ing is our favorite thing and Ive tried to BBQ just about everything. Marinade fish, beef, chicken, pork, shrimps and toss them on the grill or cut them up and make kabobs as mentioned. I also slice up veggies (eggplant, zucchini, large mushrooms, small artichokes, etc) and toss them with a little bit of olive oil and balsamic vinegar if you like and grill them. Smaller veggies work best in the foil packets. Try fruits too. Halved peaches, pineapple slices...the grilling gives them a great flavor, plain or with a bit of balsamic vinegar then place on yogurt or ice cream. We like sweet and sour pork or chicken so you can cut the meat up and alternate meat with pineapple, green bell peppers and large onion wedges. grill and then brush with a sweet and sour sauce instead of a bbq sauce. carne asada is great too. have fun with it (bbq-ing that is)

Another easy and tasty one is 2 cans of green beans & potatoes and chunks of smoked sausage simmered all together.

Crockpot meals are great. An example is a good taco soup, just cook up the hamburger and onions at home and then freeze. I also marinate meats in a lg zip lock bag, and then freeze and transport in the fridge/cooler, helping keep everything else cool. An easy first meal is canned beans, vegi tray and hotdog's over the fire, no prep. Good Luck
