crockpots are my favorite way to cook when camping and if you want to cook outside put the crockpot on the picnic table

Invest in a good Dutch oven. Our kids really enjoy this camp cooking method and plenty of DO recipes call for very few ingredients. Happy cooking and camping!

"Fajita" tacos. Grill chicken, beef, pork, or fish, and dice. Chop lettuce, tomatoes, onion into seperate serving bowls. Put out a jar of taco sauce and a package of shredded cheese.
Warm fresh tortillas (wrap 5-6 in aluminum foil and place on grill for a bit warming both sides).
or
Grilled polish keilbasa or smoked sausage served with black beans topped with shredded cheese and a few tortilla chips.

Quick & easy mini pizza's
English muffin
Spaghetti sauce
sliced pepperoni (or other meat of your choice)
grated mozzarella cheese
Place English muffin halves, faced down on grill and lightly toast. Turn muffins over and spoon on some spaghetti sauce, a couple slices of pepperoni and then top with cheese.
Close grill lid (or invert an aluminum pan over mini pizzas) to hold in heat and allow cheese to melt. Serve hot off the grill

omelets cooked in a ziplock bag
precook some mini meatloaves in muffin tin (regular size muffins)
then wrap them in heavy foil and re-heat them on the grill
frito chili pies... just put some fritos in each person's bowl, pour hot chili over them, sprinkle with shredded cheese or put dollops of cheese sauce on top.

We love to grill steak kabobs. The marinade I like is a bit time consuming so I prepare it at home and keep it in gallon size ziplock. Ingredients are basically minced garlic, chopped fresh parsely, equal parts olive oil and lemon juice and a dash of crushed red pepper. Salt the meat right before you throw it on the grill. Add sirloin steak cut into cubes and marinade from either the night before or the morning of. We add mushrooms, onions, and grape tomatoes and grill those on separate skewers.

we also like kabobs - you can use beef or chicken. Cube it ahead of time, place in a ziplock baggie with marinade (for really easy marinade, use either a pre-made teriyaki sauce or italian salad dressing). Mushrooms, onions, peppers, tomatoes on separate skewers - as they don't take as long to cook as the meat.

How about good old hamburgers over the hot coals. My wife and I love them when they are cooked this way. The smoke gives them a taste that no grill can compare and your children could "tend them" and even help flip.
