Krause...I have driven 10000 miles on my '07 GMC LMM Duramax. Around town the temp rises to 210 (bang in the center of the dial) and stays there no matter what.
Just towed a 7000lb TT over 1000 miles from Tulsa to Williams AZ. Guage stayed solid on 210 throughout except for one longer gradient where it rose maybe 10 degrees for 10 mins or so.
Sounds like you are right where you should be.

Unless the cooling fan design has been changed, you'll know when it comes on, as they are rather loud.

You will gain nothing by bringing it in. They will just look at you funny. It sounds like you are seeing normal stuff. Stay clear of the dealer, unless you want a new dent.

Yep, straight up the middle of the gauge at 210 on our 2008 as well.
Gets a little hotter on hill, but fan kicks in and comes back down.
I wish it ran a little cooler, but seems to be normal for this model.
I'm guessing they had to heat it up to run cleaner for the new diesel emissions.

If you are using the factory gauge, just remember it is not very accurate. On my 2004 I installed the Edge w/ Attitude, and that is what I use for my temp readings. Per the Edge, I normally run at 180deg F, I have seen up to 225 in the 110degF days pulling the long hills. It is well documented on the 2004.5-2005, that when they are overheating, the factory gauge is still not in the red. I wouldn't worry about your readings, my factory gauge won't even move while the Edge will swing 45 degs. Just how it is.

I've had mine come on 1 time based on temp...I was pulling 12k up a 7+% grade for about 8 miles outside temp 95ish turning around 2600 at 60mph temp barely crested the normal operating temp range then cooled back down after the fan ran for about 30 sec. I couldnt overheat this thing if I tried. There is engine overheat logic on the tranny and engine that shuts certain things down to reduce load. if you get that and your running 212~ your gauge is hosed, otherwise your good
