Pan-Fried Asparagus
4 servings

1/4 cup Smart Balance Omega light buttery spread
2 tablespoons olive oil
3 cloves garlic, minced
1/2 pound fresh asparagus spears, trimmed
coarse salt- to taste
ground black pepper- to taste
fresh Lemon Juice
freshley grated parmesan Cheese
slivered almonds



Melt butter in a skillet over medium-high heat add the olive oil, salt, and pepper. Add asparagus, and cook for about 10 minutes, turning asparagus to ensure even cooking. Because I don’t like to take a chance on the garlic burning I like to add the fresh garlic along with the slivered almonds the last few minutes of cooking. Sprinkle with fresh lemon juice and freshly grated parmesan cheese.

mmmmmm that sounds good.....I grill asparagas. Very hot grill sprinkle with olive oil and kosher salt grill to warm and still crispy

Ed & Lynne,

Yum, sounds great. When I was growing up my dad had 3 long 20' asparagus bed, plus it was gowning wild in several of our flower beds. I wouldn't touch the stuff at dinner! Well as I got older, I discovered how delicious asparagus was. Boy oh boy did I miss out on a lot when I was growing up.

I like asparagus steamed then lightly drizzled with olive oil - little salt and pepper and I am in heaven!

I grill during the spring, summer and whenever I can get good fresh asparagus. During the winter months, I will occasionally HAVE to have asparagus and all I can get is that nasty canned stuff. I will fry it in a pan just like Ed & Lynne suggested. It makes it tolerable.

We've grilled asparagus in our George Foreman grill. Use almost the same recipe as Ed & Lynne. Turns out great!
