what do I do with them? I don't like Pesto (so that is out).

My mom used to make a nice field greens salad mixed with pine nuts and balsamic vinegar.
A common recipe I always see in restaurant menus is pasta with sun dried tomatoes, chicken, olive oil and pine nuts.

Macaroni Grill makes an incredible shrimp recipe with pine nuts in it. It's one of my favorites!

Some good ideas already posted; I love them on salads.
They're very good in cookies. They have a slightly resinous nutty taste with a buttery texture that goes well with fat, salt and sugar.
You can use them in meat loaf or meatballs too, or any place where you might have used walnuts.

I second the pignoli nut cookies!
Put them in your favorite (non-red sauce) pasta.
Example- sauteed diced chicken breast, hot penne pasta, olive oil, garlic and seasonings (maybe fresh marjoram and rosemary), crumbled bleu cheese, and a handful each of pignoli nuts and crumbled crispy bacon. Maybe a little bit of sundried tomatoes, cured black olives, and some capers.

Roasted salted pine nuts are a great snack. They are addictive like peanuts only better. Just eat them by the handful plain. Shelled of course.

Do a search for Sicilian Style Stuffed Roulade on the food network.
It is a recipe that Emeril featured on one of his shows. We made it and it was outstanding. It was a bit of work, but well worth the effort.
