Pigeon Forge and Gatlinburg TONS to do, Dollywood, Great Smokey Mountains National Park, LOTS of outlet malls and Shopping, Shows dinner Theater. We usually hit the outlet malls, Dollywood and the Aquarium in G'Burg. Really depends if you have kids.
My family and I stayed in PF last year, we loved it. We took the kids to a magic show (Tony Evans?) that they loved, went to the country barn comedy show (not great, but fun hokey family entertainment), went to some arcades, and over all it was a lot of fun.
Three things that really stood out.
First, I suppose it goes without saying, is the Smoky Mtn NP. Absolutely gorgeous. We went on a nice hike and spent some time driving around. You can't go there without spending some time in the Smokies. We were going to do an overnight with my young boys but we got rained out. Still had a great time when we were there.
We had an out of this world lunch at Applewood Farm restaurant. There are a ton of buffets and chains and fast food places and dinner shows up and down the strip. I think Applewood gets a little lost in teh shuffle but if you want a great lunch head over. Fantastic fried chicken and the best apple butter I've ever tasted.
Finally, my wife went "fake" skydiving. There is a place in pigeon forge that has a giant wind turbine in the floor with a giant grate over it. You suit up in a sky diving outfit and jump in as an instructor guides you around. It simulates sky diving. It was one of the highlights of our entire summer trip for her. I need to drop a few pounds before I can do it, but i'm going to try for our next trip down to PF.
Lots to do here in Memphis besides Elvis we have the Memphis in May music festival and the Memphis BBQ contest and a great baseball team the Memphis Redbirds they are the farm team of St Louis Cardnials... were do you plan to stay while here. Let me know if I can help keep you from the bad spots... You may like the Tom Sawyers RV park just across the river actually its right on the river over in Arkansas. Let me know if I can help.

Caramel Corn! Gaitlinburg has the most wonderful caramel corn shop Karamelkorn Shoppe. Nobody does it better. I love to go to Pigeon Forge just for the caramel corn. It's right on Parkway, the main shopping street. There's also a pancake pantry (I think that's the name), restaurant just across the street. Really good and worth the wait and there will be a wait. The very most important thing to do is have FUN and RELAX!!!!!!!
Both Pigeon Forge and Memphis have much to offer, but what kinds of things are you looking for? Will you have kids with you? This may help those of us who know the areas suggest some better ideas for you.

In Memphis, I would recommend the Sun Studio tour where Elvis, Johnny Cash, Jerry Lee Lewis, Carl Perkins, etc. got their start. We also enjoyed the National Civil Rights Museum.
