I signed up to bring a dessert to a work potluck the other day. Everyone kept asking me what I was going make cause word had it that I made some pretty good desserts.

I had planned on just baking an ordinary cake mix I had on hand, but with all this talk I felt compelled to do something more elaborate. I had to work with what was on hand there was no time to go to the store.

I found a recipe on the back of my cake mix "Double Chocolate Caramel Cake" that sounded pretty good. However, I didn't have any caramel sauce. So I decided to make some Dulce De Leche, a recipe I found a few months back and posted. Dulce De Leche RecipeIt really turned out wonderful.

Here's the cake recipe

Double Chocolate Caramel Cake

1 box Betty Crocker SuperMoist butter recipe chocolate cake mix
with pudding - follow the cake mix instructions on the box.

1/2 cup semi-sweet chocolate chips

Topping
1/3 cup caramel topping (I used more)
2 tablespoons chopped nuts



1. Heat oven to 350°F Grease a bundt pan.

2. In large bowl, beat cake mix. Stir in chocolate chips. Pour into pan.

3. Bake 30 to 40 minutes or until the cake starts to pull away from the side of the pan DO NOT OVERBAKE. Cool 15 minutes in pan. Remove from pan to plate. Cool 10 minutes. Prick top of warm cake several times with fork; spread caramel topping over top of cake. Sprinkle with nuts. Cool completely, about 1 hour. Store covered.

Again, I used the Dulce De Leche for the caramel sauce. I allowed the cake to cool completely and spooned the sauce over the entire cake before I served it. The Dulce De Leche sauce is a lot thicker, so I didn't poke holes in the cake. I am sure any caramel sauce would work just fine.

I have made this and it is awesome!!!

I baked a chocolate cake mix, while it was still hot, poked holes in it and poured a can of condensed milk on to the cake. Let it cool and cover with cool whip before serving. It is really good and a little more special that a plain cake.

I have done the same except also added a jar of carmel icecream topping on top of sweetened condenced milk, then add cool whip and crushed heath bars. thus gets rave reviews!!!

PUMPKIN CAKE

1 box yellow cake mix
2tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
2 eggs
water as on the box directions, except use 1 cup can pumpkin
instead of 1/3 cup of the water
1 cup chopped pecans or walnuts

Combine cake mix and spices, add eggs water and pumpkin.
Stir in nuts.Bake in bundt pan (sprayed with cooking spray)
350 degrees for 40-45 min.

I have used lemon glaze, maple frosting, and cream cheese frosting.
Whichever you prefer.

I had a coconut cake at church last Sunday that was out of this world. I ask for the recipe, but, can't remember what kind of coconut something she used.

It was a white cake mix, baked according to directions. Holes poked in it while it was still hot, then a can of coconut something poured over the holes. I know it wasn't coconut milk. Then it was topped with cool whip and toasted coconut.

Does any one know what it might be? I want to make one for Mom as coconut any thing is her favorite.
