1 pound sweet Italian sausage, sliced
3/4 pound lean ground beef
1 medium sized onion, chopped
3 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) cans tomato sauce
1/2 cup water
2 tablespoons white sugar
2 teaspoons dried basil
2 teaspoons Italian seasoning
1/2 teaspoon fennel seed
1/2 teaspoon salt
1/4 teaspoon ground black pepper
In a large pot or Dutch oven over medium heat, cook the sausage, beef, onion, and garlic until well browned; drain fat. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Mix in sugar and season with basil, fennel seed, Italian seasoning, salt, and pepper. Reduce heat to low, cover, and simmer 1 1/2 hours, stirring occasionally.

**Note: This recipe is written "as is" and makes a great base sauce to add other veggies and spices to. I like to add sliced mushrooms, olives, and chopped bell pepper when I brown the meat and onions. (Sometimes I add sliced zucchini too!) Then, I transfer the meat/vegetable mixture to my slow cooker, stir in the rest of the ingredients -- and let it simmer for several hours.
Serve over your favorite kind of cooked pasta with some freshly grated romano cheese sprinkled on top. Of course, a side of garlic bread is a must -- YUM!

Here is one that my mother got the recipe for back in the early 60's. I still use it, even though it probably isn't all that authentic, but we really like it. It is also easy to halve the recipe, although it is nice to make it and freeze half. I like this sauce because there really is no acidity and the paste makes the sauce rich and sweet. It is also good,cooked in a Dutch oven over a campfire or on a Coleman stove.

Italian Meat Sauce
2 lbs. ground meat
2 cans Cream of Tomato Soup
2 6 oz. cans tomato paste
2 cloves minced garlic or 1/2 tsp. garlic powder, not garlic salt
1 tsp. crushed dried rosemary
1/2 tsp. ground anise seed.
1 tsp. salt
1/2 tsp. freshly ground pepper.
1/2 to 1 cup water.
Brown ground beef, use a little olive oil if using really lean beef. Drain well, add soup, tomato paste, seasonings and 1/2 cup water. Stir well, if sauce seems too thick, add more water. Cover and simmer at least 1/2 hr.over low heat. Sauce will be better if it can cook longer. This also works well in the slow cooker on low. It will stick so stir often. Serve over hot spaghetti with a salad and hot bread.
