I can only relate to you stove knob by comparing it to my gas grill. It too gets hot and I have trouble turning the knob. I am not sure why this happens but I know I would want it fixed in my camper.
As for the tank indicators, mine worked fine last season but I am having doubts about it this season. I tend to not fill it enough to get a proper reading. As for your tank being clogged, if it empties at the dump station I would think it was ok. I recently added a clear section to my dump line. (gross, I know) but I need to be able to tell it is emptying without lifting the hose out of the dump station tank. Believe me, this way is better, if there is a better. LOL

buy a tornado or a quickie flush , get it installed and you can rinse the tank out each time you dump.you will never have a clog again.

Maybe the plastic plug they drilled out when they installed it fell into the tank and the factory just let it float around until it clogged the drain.

Best advice I can give you about the black tank is to use a LOT more water. If it was clogged after only two uses then it's pretty much a given than you were NOT using enough water when flushing. First of all you should always START with 3 or 4 gallons of water in the tank before using it, along with the tank chemical of your choice (they all work so find one you like) then use at least two bowls of water each flush. You were doing WELL to make sure it was 2/3 full before dumping but it ALSO has to be full of a lot of liquid to flush out the solids.
I had a pop up that had an outside stove but it was the same stove used inside and never had a problem with knobs getting hot so I can't help there except to say it shouldn't do that (but you knew that).
