Me too.
This is my husband's favorite type of coleslaw so it's the one I make most often (it's also very easy as you see, especially with pre-packaged cole slaw!)

Hope you all enjoy it as much as we do!

shredded cabbage
shredded carrot
shred a radish or two
(sometimes I'll put a celery stalk and a piece of red pepper and some green onions in the FP and shred too)
MAYO TYPE:
equal parts Helmann's, CIDER vinegar, and sugar. Salt and pepper, celery seed to taste, dash of onion powder, and some paprika.
SWEET N SOUR OIL & VINEGAR TYPE
equal parts CIDER vinegar, sugar, and vegetable oil. Salt and pepper

This is a great nonfat slaw salad with lots of flavor and spice.


CARIBBEAN COLE SLAW
orange mango dressing (recipe follows)
8 cups shredded cabbage
1 1/2 large mangoes, peeled and diced
1/2 medium red bell pepper, thin slices
1/2 medium yellow bell pepper, thin slices
6 green onions,thinly sliced
1/4 cup chopped cilantro


Orange Mango Dressing
1/2 mango peeled and cubed
1 carton (6oz) plain nonfat yogurt
1/4 cup frozen orange juice concentrate
3 TBLS fresh lime juice
1/2 - 1 jalapeno pepper (seeded and minced)
1 tsp minced fresh ginger
Add all dressing ingredients to blender or food processor, mix until smooth.
Toss gently with salad. Is best eaten same day or next.

This is great, and doesn't require any refrigeration:

Ramen Noodle Salad
2 lb of cole slaw
2 oriental ramen noodle soup
1 Cup sunflower seeds
1 Cup slivered almonds

Dressing:
the 2 seasoning packets from the soup
1 cup oil
1/2 cup sugar
3/4 cup vinagar

Make the dressing and add to the salad mix 24 hours in advance. Toss prior to serving.
