May is finally here and the Vidalia Onions are finally in the grocery store. I do not really like onions, but I do really like a fresh sweet Vidalia onion sauteed with my squash.

Do you have a special recipe using Vidalia Onions? Please share.

Just on white bread spread with mayonnaise or "miracle whip" and just a little salt. Wanna see a loaf of bread disappear fast?

I had a few a week or two ago and was disappointed. Vidalia knock-offs maybe.

We like to saute sweet Vidalia onions with mushrooms and olive oil. We put this on our sandwiches or salads. They are delicious raw also.

Every year in May I make this. YUM!! We eat it as a side dish.

VIDALIA ONION PIE

4 medium Vidalia onions, sliced thin
1 stick butter
3 eggs, beaten
1 cup sour cream
salt, pepper
Dash Tobasco
Grated Parmesan cheese
1 unbaked pie shell

Saute onions in butter. Scrape into a bowl. Combine eggs and sour cream, add to the onions and butter. Season with salt, pepper, and Tabasco and pour into pie shell. Sprinkle with cheese. Bake at 450 degrees for 20 minutes. Reduce heat to 325 degrees and bake for 20 minutes.

Here is a recipe that I've posted before.......I haven't made it with Vidalias which would make it even better......


Here is a simple to prepare, creamy onion side dish that is a great addition to a summer time potluck.....I had this recently at a camp out and it's a great alternative to potato salad type dishes


Festive Onions

4 cups sliced onion
5 tablespoons butter
1 cup cream
salt to taste
ground black pepper to taste
2/3 cup Parmesan cheese
2 eggs

Saute onions in butter or margarine until transparent. Place in 2-quart baking dish. In a small bowl, beat eggs well. Stir in cream, and season with salt and pepper. Pour mixture over onions, and sprinkle cheese. Bake, uncovered, at 425° for 15 to 20 minutes.

Don't know about a secret recipe, but, a liverwurst and Vidalia onion sandwich can't be beat!!

"Marinated Grilled Onions"

marinade ...

3/4 cup soy sauce
3/4 cup brown sugar
2 cloves garlic - minced
1 piece ginger - grated
1 tablespoon sesame seeds
1/4 cup water
2 green onions - thinly sliced
1 tablespoon oil
1 tablespoon booze - tequila, bourbon (your choice)

Peel and slice the Vidalia or Texas Sweet onion, about 1/2 to 3/4 inch slices. Lay the slices in a dish, pour the marinade over the onions and let them marinate for 1 - 2 hours. Grill on a medium hot grill, turning over once and adding marinade as they cook. Grill them to your desired doneness. We tend to like them slightly crispy.

This marinade is also great on flank steak, skirt steak and chicken.
