I was wondering if the truck campers that would fit a Dodge Ram 2500 short bed would sleep a family of four? I see most have a queen bed, and a dinnette bed?
It depends on how big your kids are. The dinette will sleep two if they are smaller. Some campers also offer an over-dinette fold out bunk as an option as well.
Have you considered a pop-up TC? Outfitter's Apex8 will easily sleep 4 and can handle up to 5 with its queen bed, dinette and pull-out bunk. Its lower COG over a hardside also offers better handling, both on and off road.

There may be others but Lance makes a cool camper for your truck with a rear pull-out bed.
Looking for any information available on Del Rey "Sky Lounge" and Kamp King slide-ins for preservation/restoration projects.
I have a Lance 815, its design for either long or short bed. One can do 4 people in this camper for a short peroid of time, three in the cabover and one in the converted bed (dinnitte table). Like many TCs there is limited amount of move around space. My DW and I have had her two adult kids with us on a couple of short trips.
Check out the new Lance 830 with the rear tent option. Very cool.

We fit 4 (DW, me & 2 kids) quite comfortably in our Alpenlite 935 on our SB Dodge. We're in the cabover queen, daughter in the dinette, son up in the fold-down bunk. We do often wake up with one or both kids squeezed in between us
Very cool! It looks like there is a much smaller dealer network for these style campers than say, TTs? Also, is it safe/legal to ride inside while traveling?

Woah, you might just regret asking that question. In most states it is legal to ride in a truck camper, but I'm sure you are going to get a lot of feedback about the dangers of doing so.
We sleep 5 in my short bed lance. My twins on the dinette (they're 3) and my oldest on the bunk (5). Wife and I in the cabover. That being said I may be buying a small tent for myself to sleep in
