This is good and makes a big bowl,so great for potlucks. It does hold up really well though and will still be good up to a week after making it.

1 large or 2 small packs of Jello Butterscotch instant pudding
14 oz can crushed pineapple,undrained
4 Granny Smith Apples
4 Red delicious apples
8 oz tub Cool Whip

Combine dry pudding mix with pineapple and juice,mix well and sit aside. Dice unpealed apples into small pieces and combine with pudding mixture. Fold in Cool Whip and chill. Makes approximately 16 1/2 cup servings

Note:this was actually a Weight Watchers recipe so can be made with sugar free pudding mix,pineapple in its own juice and Fat free
Cool Whip.1.25 WW points and 90.7 calories per serving

Yummy! Does it really taste like a carmel apple? I love the idea of using sugar/ff versions as DH is a diabetic and well, let's face it, I could lose a few pounds! I'm going to make this later this month when go camping with our gang! Something different and refreshing!

Here's the recipe I used back in the mid-80s (I think it was about that time.). This was a very popular recipe back then and it really tastes JUST LIKE A TAFFY APPLE! Kinda disappeared in years following.

Taffy Apple Salad

4 C. granny smith apples, peeled (4 apples?)
8 oz. crushed pineapple
8 oz. cool whip
1 T. flour
1 egg, beaten
2 T. apple cider vinegar
1 C. grated salted peanuts

Mix flour, sugar, pineapple juice, egg, vinegar. Cook over medium heat until thick. Refrigerate until cold (hour or so). Add apples, pineapple. FOLD in cool whip and ¾ of the nuts. Sprinkle balance of nuts on top.

there's quite a difference in the amount of apples in the recipes. How does that affect the taste and the texture?

Well in the recipe I posted it doesn't have the size mentioned of the apples,so I have made this twice,once with 8 regular sized apples and the other time for a potluck I got large apples. The large ones were too large so I did end up using only 7 of the large apples,it was still plenty moist and the pineapple juice keeps the apples from turning dark.Its really more of a dessert than a salad,but its even good for breakfast!
