I've looked for, and not found, AC-only water heaters specific to RV applications, i.e. designed to go into a wall opening and vent to the outside.

There are electric tankless water heaters sold for residential "point of use" applications that are promoted for a RV application. An Eltron DHC 3-1 uses 120V supply at 3KW (dedicated 30 amp circuit) and can raise water temperature 40F at a 1/2 gallon per minute flow rate. This may or may not be enough, although this is typically the maximum power available to most small RVs.

If you need more (or hotter) water, you would be in to 240V power at 30 to 50 amps, tankless. It takes 6KW to 10KW to match the heat output of a RV-sized gas water heater.

For a small tank electric water heater, check with your local plumbing suppliers. There are a few companies still making apartment-size and under-the-sink tanked electrics. Marathon, for example, makes 120V 3KW heaters in 15 and 20 gallon sized, just under 36" tall.

Another category between a traditional tank and tankless, is the "mini-tank." For example, Ariston mini-tank heaters are sized from two and a half to six gallons, with heating elements as small as 1.5 KW, about an hour to recover 90F for six gallons.
