This year we stopped in Lafayette, LA for a week. Besides the great food in the area, there's lots of historic towns within a short drive, even the home of Tabasco sauce! We stayed at Acadiana Park, a city park in Lafayette.
In Texas, try Palmetto State Park, just off the interstate. Seminole State Park, west of Del Rio, has a great ranger-led tour of the cave drawings. Stop in Alpine to get provisions before going to Big Bend.

The McDonald Observatory 145 miles north of Big Bend, 38 miles north of Marfa. Also the Marfa lights. You might find out more about those in Marfa or on the internet.
North of Big Bend and I-10 is the Guadelupe Mountains and then just north of there is Carlesbad Caverns (New Mexico)
There is a small but nice state park (I think) called Lost Maples. South and a bit west of San Antonio.
Houston (Clear Lake) has the Johnson Space Center (not as good as 20 years ago, but nice)
Another nice Louisiana State Park that is not too far off the interstate is Sam Houston Jones just north of Lake Charles. They do have some hiking trails there. The dear are not scared of people so you will see them.
Be careful if you are going I-10 in Louisiana, just before you get to Texas. I can't remember exactly where, I think it's around Lake Charles. The road is really bumpy for several miles. Sorry I don't recall the exact spot, but it's a real rough ride. We haven't pulled the trailer on it yet, just drove the car. Does anyone else know the area I'm talking about, and if so, is there a detour?

Goose Island State Park, Galveston Island State Park, Mustang Island State Park, San Antonio, Hwy 90 West, Catarina, Lake Amistad, Seminole Canyon State Park, Fort Davis State Park, Alpine, Terlingua Ranch Hotel and RV Park. If you decide to go further West check out Guadalupe Natl Park, Hueco Tanks State Park, and Franklin Mountains State Park.
I guess what I want to say is Texas has great state parks.

There is road construction between Iowa and Lake Charles.
I would suspect you have already done quite a bit of research on Big Bend by now. But I did want to address an earlier post about not much to see or do in Big Bend.
We’ve been twice, once in mid March and once over Thanksgiving and we had wonderful weather during both. Those are also the busy times of the year there, but you wouldn't know it because it is never crowded. It can get pretty chilly in the evenings and it rains and, even, snows at the higher elevations occasionally. But the low humidity and the desert scenery makes for some glorious sunsets and some great hiking.
Big Bend is not for you if you want the entertainment to find you. It’s a place where you take your time and look for what it has to offer. We are in our early sixties and plan of going back as often as we can and are planning our next trip with the grandkids. There is much for them to learn there.
