Vickie, I LOVE black-eyed peas, and prepare just like most everyone else here does. And I like a little hot sauce, some green onions, fresh tomatoes and cornbread. YUM

I love black-eyed peas, any way you fix them. I mostly eat them from the can now, since I am the only one that likes the.

I've heard them called "cow peas" because they were grown to feed the cows.

I simmer chopped onion, chopped grilled pork chops, chopped garlic, and a couple of whole jalapenos with the stem ends cut off. After the water has gotten seasoned I add rinsed dried peas, salt and pepper, and cook for an hour or two.

Just for the two of us I use the ones in the can (Bush's brand) with bacon. They are great with pork chops, kraut, sliced tomatoes,some onion, and cornbread!

I love black-eyed peas, and they're good for you too. My grocery store carries large bags in the freezer section. I usually saute them in olive oil with onion, garlic, red bell pepper, celery and herbs. If I make them for a potluck, I'll make it vegetarian. If I make them for home, I use bacon instead of olive oil.

My step mom always says, "Everything's better with bacon." I agree.
