Vickie, I LOVE black-eyed peas, and prepare just like most everyone else here does. And I like a little hot sauce, some green onions, fresh tomatoes and cornbread. YUM

Drain, rinse and pick thru to make sure there aren't any rocks accidently picked up by the mechanical harvester. If you use fresh, obviously you don't have to go thru this step. I then buy 1 or 2 country (salted) ham hocks, put them in a cast iron skillet and bake on 350 for an hour or so. Pour off the grease and place the hocks, peas, chopped onion, salt (just a little since the ham is salty) and a couple of tablespoons of sugar in the crock pot and cook until the broth gets very gray looking and thickens. Serve with my wife's green tomato relish. It will make a rabbit hug a hound!! Good Luck and Drive Careful!

I love black-eyed peas, any way you fix them. I mostly eat them from the can now, since I am the only one that likes the.
I've heard them called "cow peas" because they were grown to feed the cows.
I simmer chopped onion, chopped grilled pork chops, chopped garlic, and a couple of whole jalapenos with the stem ends cut off. After the water has gotten seasoned I add rinsed dried peas, salt and pepper, and cook for an hour or two.
Just for the two of us I use the ones in the can (Bush's brand) with bacon. They are great with pork chops, kraut, sliced tomatoes, some onion, and cornbread!
I love black-eyed peas, and they're good for you too. My grocery store carries large bags in the freezer section. I usually saute them in olive oil with onion, garlic, red bell pepper, celery and herbs. If I make them for a potluck, I'll make it vegetarian. If I make them for home, I use bacon instead of olive oil.
My step mom always says, "Everything's better with bacon." I agree.
