You could sat out a can of gas with a pound of sugar in the can. Be a while before his car would run again.

I do weird things, like store BioDiesel in gas cans and two stroke mix in yellow Diesel containers. They might not get what they plan for if they just lift it from me. Heck I can't even explain it to family correctly. My Brother took my BioDiesel, by mistake, and mom put it in her leaf blower. It took my brother a long time to clean it and make it work again. Probably the last time they "barrow" fuel from me.
I like your idea

A buddy of mine kept getting gas stolen, he installed razor blades on the gas cap. They tried to steel from him one more time.
When he got up there was blood everywhere and a couple gas cans.
Still had his gas too.

I haven't been robbed, but I do have a very dumb setup on the security of the tank. Monaco put locks on both of the small access doors to the filler. However, the propane tank is in the same compartment as the fuel tank. Propane tanks must be accessible at all time so that bay cannot be locked. All you have to do is open the bay door and you have complete access to the fuel cap.

For 75 gallons to walk off expect it to be leaving out the gate and not over the fence. In the summer there is not a technical reason to park with a full tank like in the winter where you get big shifts in temps.

Locking gas caps dont work..Most times you can slip under and just cut a hole in rubber neck and insert an Oklomaha credit card and drain away..I would double check your fill neck for damage.
I use to keep fill neck hose at my Station as this was common pratic during the last shortage here in So CA .

I agree, you got off cheap if they didn't punch a hole in your gas tank. I have a locking fuel door in my DP & have yet to have a problem. I did have some gas cans stolen once when we were camping but I blame myself for leaving them out unsecured at night. In your case I would leave as little fuel as possible in the tank when in storage & not purchase locking gas cap. They can do more more damage if they try to circumvent a locked gas cap. Another issue that comes to mind, do you think it was a fellow storage person who did this? Maybe these bastards will light up a smoke while siphoning off someone else's gas someday & get their just reward.

Sorry for your troubles, it's the signs of the times we are in. I would recommend storing your rig with as little fuel as possible and hope for the best in regards to the thieves not hurting the rig.
Fuel, copper, and other metals are becoming valuable commodities. A pipeline company operating in the area had estimated approximately 2,000 plus gallons of fuel stolen and one of their water trucks got the whole front end ripped off so the thieves could get to the radiator faster.
The thieves are getting very cleaver, instead of using a vehicle (were it can be identified by plate no. etc.) they are cruzin the area on quads and dirt bikes. Then returning to hit the targeted vehicle/s with tucks that have maybe one or two 97 gallon reserve fuel tanks in the bed. They are fast using electric pumps to retrieve the fuel.
As well as a lock Conex, to the thieves it is just an inconvenience.
Mr Brew-ski hit a good point, it's my opinion that since this type of crime will not bring on a heavy investigation many possibly are inside jobs.
