My husband's family always reused their bacon grease for everything. Heck, they even spread it on their biscuits instead of butter. Of course, they all died at a relatively young age of heart attacks too.
I have a small electric griddle from Wal-mart that I fry all my bacon on with the vent hood running. I fry it completely done, ziplock bag it and stick it in the fridge. I take out what we want and nuke it for about 10 seconds and it's great - why recook it for 1 min. It will make the kitchen smell of bacon if you do it that long...but then, I don't care - I love the smell of bacon.

I spend one afternoon every so often frying bacon and sausage. When it is cool, I put it in freezer bags and place it in the freezer. I can take out what I need or bring the bag with us in the RV. I save, usually a pint jar of bacon grease and keep it in the fridge. I do not save any more until that is used. If my afternoon of frying comes along and I still have some grease left, I throw that out and replace with a fresh pint jar full.
I take the jar of grease with me when we go camping, If I am planning on frying potatoes, or making Biscuits and gravy. (I keep biscuits baked and frozen too.)
I put some bacon grease in a big skillet and throw some of the bacon and sausage back in it for a few minutes to warm it up, and, then use the grease to make gravy. No grease smell in the RV!

We like our bacon cooked very crispy. If I cooked it to a crisp point before freezing it, the bacon would easily crumble into smaller pieces. Great for a salad, but not great for bacon & eggs

My mom used to use the saved bacon grease to pop popcorn. We had a special pan that we used solely for the popcorn (we had popcorn a LOT since it was inexpensive). Popped with the bacon grease sure gave it a different but yummy flavor that can't be beat.

I know some people keep bacon grease in one of the small lidded crock containers. I put the grease in a small plastic container with a lid and store in the rv refrigerator. At home, I usually make green beans that afternoon so I can use the grease and then toss what's left.

I used to strain my bacon grease and keep it in a soup can in the fridge - taking out a tablespoon or so whenever needed. I do have the sieved grease can now, and it gets used often enough not to go rancid, while sitting on the sink counter (cooler than by the stove).
I use it for frying, add it to beans, and to other stuff (can't think right now) - sure beats vegetable oil for performance and flavor.

My mom would dis-own me if i ever threw away bacon grease. My DH and I eat a lot of bacon and I always save mine in a metal coffee can. When it gets full I put it in the freezer until I visit my mom and bring it to her. She is always thrilled when I walk in and she sees the coffee can. She uses it to season a lot of dishes such as green beans, pinto beans, cabbage just to mention a few. On another note I saw somewhere in here where someone talked about cooking bacon and freezing it. What I do is when I find it on sale I will buy several packages and freeze it. I don't freeze the whole package but I get a large cookie sheet and lay out the pieces separating the layers with wax paper or foil and put it in the freezer. When it's completely frozen I will put the individual pieces in a gallon freezer bag and put back in the freezer. You can cook the bacon from a frozen state and you don't have to worry about it ruining before you can cook a whole package if it's not frozen. Another thing I do when i need bacon bits is take whatever I need from the freezer and cut it into small pieces and then cook it. By cutting it before you cook it you don't have to crumble it after it's cooked.

I used to save ALL my bacon grease just like my grandma and my mother.......After getting my food handlers safety certificate, it now goes into a coffee can until it is full and then into the garbage after the full can is hard.......If I know I will need bacon grease for biscuits/gravy, green beans or potatoes at a later date, I refrigerate it immediately.....Bacteria grows at an ALARMING rate between 40-140 degrees!
BTW.......Unless it's job related, I don't recommend ANYONE take a food safety class or test.......It will definitely change the ways you are accustomed to cooking.......I WISH I didn't know what I learned!
