Ok, I'll be the first - I'm shocked that I haven't read any menu's for July 4th. Here's what I'm doing...what about you?

On the grill:
Baby Back Ribs
Grilled Avocado & Asaparagus
Corn on the cob

Scalloped Potatoes (in the crock pot)

Homemade rolls (dough made in the bread machine, rolls baked in the toaster oven)

Banana Pudding in the fridge

Ok, so we're gonna be miserable after eating all that...so ya'll come on over and help us eat! I just love "roughin' it!"

Timing's my problem - our friends are having to work and I haven't got the definate time set yet, but when I do, ya'll come! Bring the watermelon, ok?

OH! I forgot to tell ya'll about the appetizers:

jalapeno pepper poppers, filled with cream cheese, shrimp & crab, & wrapped with bacon.

Oh...I'm miserable just thinking about it. Come to think of it - WHY didn't I just do a bunch of appetizers and skip all the rest - too much work! ha!

DH already has the cabrito marinating! The pasta salad is almost ready, deviled eggs are arranged on the tray, the layered veggie salad will be made fresh and it's homemade vanilla ice cream for dessert! Of course, that will change if it continues to rain in South Texas, but we are so desperate for rain, we will be very glad to change the menu to accommodate an indoor July 4th! Hope everyone has a safe and happy holiday.

We are going to have grilled tenderloin (if dear BIL gets the marinade recipe to me in time), potato salad, deviled eggs and creamy cucumbers. Have some strawberry/rhubarb pie in the refrigerator. We're at home because the 5er is in the dealer to repair the damage done on the way to and during our stay at Ft. DeSoto, Florida. Otherwise we would have been in Montana enjoying this meal.

Marinated Carne Asada on the new gas grill, with all the fixin's: tortillas, peppers, onions etc., Jack's-Beans, Rice, Corn-on-the-cob, Salsa Fresca, Guacamole, and folks are bringing salads and desserts.

I have no menu planned for the entire 3-day holiday weekend. I'll be flying by the seat of my pants.

We are staying home this weekend as the DH hates to travel on holiday weekends. We are going out next weekend with some friends. I am presently working on that menu.

Our is pretty boring, as my youngest DS is learning to grill. Burgers and dogs, of course, and grilled chicken, with bbq sauce added at the end.

I have potato salad, pasta salad, and a strawberry jello poke cake, that will have strawberries and blueberries on top already made.

Will make some mac and cheese for the grand kids and cook some corn on the cob and again, watch Mom make wilted lettuce. I HAVE to learn how to make this!

Will have watermelon later in the evening. Will be taking the grand kids to the carnival (yep, all 5 of them) and fireworks later this evening, so I am sure there will be a need for some kind of carnival goodies.

Other then the wilted lettuce, I let the grand kids make the menu.
