I am wanting to install a second AC unit on our 2005 FS30 - which my understanding is that it is already pre wired for this. However I am not sure about the ducting? and in order to run both AC's at the same time - I would also need to upgrade to a 50amp service? from the current 30amp. Can someone advise is this is something that I could do myself? is it hard to do? and what cost am I looking at to either do it myself? and/or have it done.

Install a non-ducted ac and run a power wire to your electrical bay. Run the second ac with a seaparte 20 amp cord set that you can plug in to cg's 20 amp outlet on the pedestal.

You don't duct the second AC.
It goes over the front bedroom, it replaces the sky light.
Not sure on the 30Amp vs 50Amp.

You should have an Onan 5500 in your WW. From what I understand, You should be able to run both ACs on the onan but only the main AC will run on the 30 amp shore power. unless you run a separate cord like JFG said. I was going to add a second AC to the FS2600 I had but never got around to doing it.
