I have Kongs now, but am not certain what to put in them to freeze - peanut butter the best? Should I stuff in some hard treats also? Any Kong experts out there?

I use a variety of things.
Hard treats don't last long enough for mine (they're experts at popping dry treats right out of a kong), although it's a good thing to start with to get a dog used to a kong w/o getting frustrated.
Peanut butter is good if your dog can handle the fat and calories. You can mix it with mashed bananas, fat-free yogurt (plain) or cottage cheese to help reduce the calories.
I've heard that pre-packaged frozen meatballs are just right to fit the opening of a kong. I can't use them due to one of my dog's allergies, so I make my own (using mostly just very lean ground beef and something to bind it together). Guessing to get the size just right to fit a kong is a bit tricky, though.
You can also take a slice of cheese or slice of lunch meat, roll it up and place it in the kong. If you can get it to uncurl just right, it will cling to the "wall" of the kong.
When it comes to stuffing a kong, you're only limited by your imagination and your dog's tummy tolerance!

Hope this doesn't sound crazy, but canned pumpkin freezes well in Kongs, most of my dogs love it, not a lot of calories, and it's cheap.

Megan gets frustrated very quickly and ends up tossing the kong at us if she can't get the stuff out quickly. We use Iams wt. control treats, just hard enough to get them out that it takes a little work, but not so much work that we get the kong in our lap.

Depending on the dog, I've used a mixture of peanut butter and kibble, canned pumpkin, and chicken broth. The broth is tricky, the best way I found was to freeze it in a ziplock bag till slushy, then spoon it into the Kong and let it freeze hard. That worked wonders for a teething puppy. The pumpkin, as corglet pointed out, is cheap and low in calories. Just be sure you're getting canned pumpkin, and not the pumpkin pie filling! The mash of peanut butter and dry food is the most popular with the dogs, but a lot of calories... basically it has to replace an entire meal. I've used it on long car trips, though, as a combination travel meal and entertainment system.

I stuff dog cookies in mine, seal the opening with peanut butter, then freeze overnight. I do it once or twice a week for when we go to work. They remember when I put it in the freezer the night before and stare at the freezer in the morning until I give it to them. Smart pups they are! Agnes

I use their normal dog food (deduct amount from their daily ration) then fill the ends with peanut butter and freeze. It's great for when we have dinner guests and I want some quite time.
I also freeze beef marrow bones for an occasional treat, although I make them eat the bones outside or on the porch. I get the bones from our local butcher. They are leg bones sawn into little circles. The mutts go crazy for these!

I make smoothies out of blueberries, banana, coconut oil and Manuka honey and a little water (you can use yogurt too, but Hooch can't have dairy).

I got some pumpkin today and will try it. Will also throw in some kibble and less Peanut butter. I am worried about weight gain in the older dog and also more than necessary in the pup.
