I think it has pretty well be covered above. I've never had any issues thus far. Get a trailer that will match well with the weight of your load. I would also recommend a tamdem axle trailer for two ATVs. Enclosed would be the best bet for security and ability to store other items.

When you are towing doubles. How would you be able to tell if something happens to the trailer (flat tire) or the load? I haven't tried it and the DW dosen't want me to. Just curious

I wanted to pull double trailers from NY to FL for the winter and found that it was illegal in almost every state on our list.
Next I researched the swivel wheel trailer and also the Idaho tote and found that most states consider these trailers a double tow, in fact one of the web sites that has information about these trailers will tell you they are a double tow.
Unless you have an extension on your trailer frame that doesn't have any wheels under it, it is considered a double tow by most states.
Don't forget the salesman wants to sell you their product and will tell you what you want to hear. The last thing you want is to be 800 miles from home and be told (after you get the ticket) you'll have to unhook and move one at a time.

I have Pressure Pro sensors on all tires to keep an eye on them. As for the load, that is a bit more difficult. I watch the mirrors a lot, especially on turns where the rear trailer is more visible. We also stop every 2 hours to stretch and check the rig. No issues in 11 years.

You may want to invest in a fishermans tape measure.

Otherwise, no big deal, you drive & it follows.

depends on the trailer width but my double towed (5er and boat) boat trailer had wider axles than the 5er. When towing your trailer at nite you don't see anything anyway. My wife had/has no input as she doesn't drive/maintain the rig.
