Man!!! walking through the store yesterday I spotted some Chorizo sausage, made here in Texas ,, grabbed the link package of uncooked type.. This morning I removed the casing and tossed it in a skillet with some onions.. and chopped potato.. after the sausage was done,, added one egg and semi stirred it get it done. Didn't mix it all together just cooked it all in one skillet.

Ideally you would want to cook the hash browns, sausage and egg separate, but this work.

Serve with soft warm corn tortilla with lots of melting butter and a good cup of coffee..

Your tongue will be happy.. DO NOT salt!!! this sausage has plenty of salt in it..

I Love one pot meals that I can make for a crowd and my other half loves chorizo, this should make us both happy. Thanks for sharing

There is nothing better than chorizo and eggs. Haven't had them in a while. I found a place in Tucson that sold the spices and have made my own for the past two or three years. Yum

True story...last time I bought chorizo...cooked it up with some eggs, my wife bit into it and bit into a .22 slug.

None the less, I love chorizo, but we haven't had any for a while.

The DW makes basically the same breakfast 2 or 3 time a month. We do love our chorizo and you will almost always find some in our freezer.

I just couldn't get past some of the ingredients:

Chorizo can be made from a variety of meat cuts, including lips, lymph nodes, and salivary glands

Same with 'All Beef' hot dogs and other processed meats. If you make your own, you control what goes in.

That is why we call store-bought hot dogs L&A dogs.... lips and a-holes YUM YUM :-)

Sometimes it is best NOT to know what things are made of, just that they taste good!

Personally, I find it amazing what people have done with the "trash" parts of animals over the years, to make them tastey and that there is no waste.
