This past weekend I had to fix 64 pieces of garlic toast for my camp group meeting. I think this is the first time I have used my oven since we bought the camper at the beginning of the year.
I was able to fit 6 pieces of toast in the pan and the two inner pieces would burn and the outer pieces would still be half frozen.
We are planning on going camping for Thanksgiving and I had planned on cooking a pan of dressing and a casserole. My question is how can I get the dressing to cook eveningly and not burn in the middle and be raw every where else. Would I be better off carrying my toaster oven and making smaller pans.

This is a common problem in many of the smaller RV ovens. Many folks put unglazed ceramic tiles in their ovens to distribute the heat properly. Some other folks use pizza stones as well in place of the tiles.
Personally we place a ½ sized "Airbake" cookie sheet right above the shelf that has the burner under it. The cookie sheet has been in the oven ever since we've owned the trailer.
DW now bakes everything, pies, cakes, cookies, breads, in our oven with no issues at all.

We use a 12" floor tile on the shelf above the burner. Everything turns out great.

I think the cookie sheet we use measures around 8" or 10" x 12" or so.

We had the same problem (everyone does).
This is what we use...
Pampered Chef
DW now uses the TT oven just as much as the home oven.
You may want to bring along an oven thermometer as well just to fine tune things.

Do you put the stone the same place as the tiles???
On the shelf above the flame or on the rack???

I own both the stone and the air bake sheet. I use one or the other or even both depending on what I'm making. If I'm making french fries or pizza, I just bake directly on the stone, on the rack. If I'm doing bread items, I put the stone on the bottom of the oven (between rack and flame) and my cooking items on the air bake sheet.
