I make my mothers recipe. It is an amish version of potato salad.

10 lbs cooked potatoes diced
1 1/2 cups chopped celery
1 dozen hard boiled eggs chopped
1 lb bacon fried crispy and cut up
1 1/2 cups diced onion
1 cup sugar
3/4 cup cider vinegar
1 quart mayo
salt and pepper to taste

It is a sweet sour type dressing. Best if made the day before.
My mother also added the bacon drippings....I omit that part ! ! !
But it sure tasted good ! ! !

YES - some one said "BACON". Add it to the mix and some on top with the chopped eggs and paprika. Also, like to add chopped sweet pickles or relish.

Potatoes
1 dozen eggs
Celery
Onion
1 or 2 jars of pimento
Best Food Mayo.
Salt & Pepper

I am begining to see a "POTATO or TATER SALAD JAMBOREE" where we can get together and sample all these wonderful recipes. Can you believe how many different recipes there are just for Tater Salad!!! I am so hungary just reading them all....

Do you have to use a washtub to mix this in??? That's a lot of potato salad!

My recipe is simple...just potatoes, mashed with butter & milk, salt, pepper, Miracle Whip type salad dressing, mustard, dill pickles and onions...No eggs for us!
