A few years ago, my neighbors at the time were retired and moved here from up state NY. He was in one of the ****ry stores around here and came across the small cans of possum. I believe it was potted meat and some one had somehow put labels on the cans that said it was possum. You know, like you used to be able to buy stuff like this at Stuckeys. You know stuckeys, the ones which were every mile or so on all main hi ways. Anywho, He thought it was the funniest thing he had ever seen. He bought all he could and sent them to his friends in NY. This was over 30 years ago. He was one of the first campers I ever knew. He and his DW had a truck camper and really enjoyed roughing it.

Grits!! Somebody that doesn't like grits didn't fix them right.
We were in a cafe for breakfast the other morning and the lady next to us (obviously from up north according to her accent), decided to try some grits. She put sugar on them, added some milk, and didn't like them.
I ordered grits also. Salted then, added some butter, put my over easy eggs on top of them, cut the eggs up, stirred them in, added a little pepper and boy they were good. White grits are good but the yellow grits are better.
The lady watched as I prepared mine then asked the waitress to bring her some more grits with 2 eggs over easy. They changed he opinion on grits.
I like eggs and brains, my mother used to fix them. It's all in fixing them correctly.

I love this subject. As a fan of shows like Anthony Bourdain No Reservations and Anthony Zimmern's Bizarre Foods, I wanted to work my way up to brains.
- Menudo and other tripe preparations - magnificent.
- Buche, chitlands, etc, no problem
- Lung - well now you're pushing it
- Sweetbreads - now that's a true delicacy and not one to get too grossed out either!
But brains... Tried them twice (since I didn't want to base my preference on one experience... either that or I was a slow learner). First time was in some tacos at a very authentic taco place. Now I like tongue tacos, head tacos (cabeza - mainly cheek meet), even tried buche. But these brain tacos were beyond comprehension. They had a characteristic flavor that just plain grossed me out. I finished the one taco just to say I did it.
But since I knew that might not be the best say, I also bought beef brains from a premium butcher. I did everything "right", getting rid of the membrane, soaking, etc. Instead of eggs, I did a midwest style brain sandwich. Dip the brain in eggs and flour, fry up until golden brown, serve in some plain white bread. I just didn't dig the texture. A little too tender . Very mild flavor but just grossed me out. I think I ate 2/3 of the sandwich then I decided that Bourdain and Zimmern can have their brains. I'll take the sweetbreads, though.
Grits are a southern staple. Brains, chitlins, cracklins, tongue, lungs, etc, which are called the "lights" when a hog is butchered are eatten by a few people. Now if you have a hog butchered, some places, they can't give them to you.
When my wife's grandad wanted to split a hog, I got all the junk. Chops, ribs, hams, picnic. He got the "good" stuff. Head, feet and lights. When he butchered hogs on his farm, nothing was wasted.

A friend of mine in Thomasville, GA used to distribute the "Georgia possum" in cans. It was potted meat (as a disclaimer on the label stated) and went over great for a while, but eventually died off.
Mmmmm, Brains, er, Sesos. They kinda lost some of their popularity with the onset of Mad Cow disease.
Here in Southern California cooked Calf Brains are a common culinary item due to the popularity of authentic Mexican, Salvadorian, and French food. For breakfast, you can easily find Mexican or French cervelle de veau, brains with scrambled eggs, (sometimes with some tongue). You can also find burritos and tacos made with calf brains at any lunch truck or authentic restaurant.
Never seen canned brain. Or, canned pork brains in gravy, for that matter! And, I grew up a few miles from a stinky and giant Farmer John's pork processing plant in Los Angelus' suburb of Vernon!
Oh my gosh, my dad used to eat brains and eggs. Mom tried to get me to eat them but that was one fight she lost! I tried but the texture grossed me out, yuck. I eat a lot of different type of foods but will never knowingly try that again.
My folks made it thru the depression so nothing was wasted....We had other horrible things to eat like tripe....your jaws got tired before your stomach got full, and hominy which was also bad and stewed tomatoes and okra......we could not leave the table until every thing that had been put on our plate was eaten.....another of my unfavorites was salmon cakes...UCK
