I am in the process of upgrading to HD Satellite. I had my non-HD TV replaced last year already and have been using a standard sat receiver with it since. I just bought an HD sat receiver and was attempting to hook everything up today. I have an HDMI cable that runs from the back of the TV to the sat receiver. Then I stopped and wondered about my switch box. Does this HDMI cable have to go to the switch box before it goes to the sat receiver, in the same manner as the old coax cable? If so, my switch box doesn't have an HDMI port. What to do?

You can do away with the switch box.
The over the air antenna will plug directly into the TV.
Your remote should have a button to allow you to switch between the Sat and over the air inputs.

Not sure what you mean by switch box? What did the switch box do? Either way, if your sat receiver and tv have hdmi connections, that's all you need. If you also have an antenna, simply hook it into the sat receiver.

The new TVs have all the inputs hardwired and controlled directly by the menu system. Switch boxes have become largely irrelevant.

This all brings up another question. My DVD player is also my surround sound amplifier. It is not HD ready. Will my surround sound still work if the HDMI goes only between the TV & Sat receiver? This is all getting kind of confusing to me..

HDMI cable carries both audio and visual and its encrypted-not that that really matters. But your HD receaver box may have the audio out to run to your dvd audio box and fix that problem (Yellow-Red). You may also be able to carry the signal straight from your HD receaver to your tv and then out to your dvd receaver, most tv's now have an audio out, both of mine actually have an optical out, only the one at the stick house is used like that.

I think I understand your question. You are wanting to have your satellite available on 2 TVs.
I'm not sure if there is a switch box that supports HDMI, there might be. But that would require running a very long HDMI cable to your second TV. That could be very expensive and I not sure how much signal loss you would have. I'm only familiar with Dish Network, but they have a HD satellite receiver that can support 2 different TVs - 1 HDTV and 1 SD TV. This actually sends the signal to the SD TV through your existing coax. The remotes are RF and can operate the receiver through walls.
Since you already have your old Satellite receiver, why not just install it for you second TV? That would just require running RG6 coax and a satellite antenna switch connected to your satellite antenna.
There are other options, but I am by no means an expert on this...

You probably have a Winegard RF video switch that connects your TVs, sat, etc together.
See Slide 01 in this link for what you probably have now.
To hookup your LCD, look at the wiring in Slide 03.

I have a switch box on my Directv because if I have to use a portable outside dish because I am in the trees I can switch from A to B and use the outside dish.

UPDATE:
I left the switch box in place. Without it, there would be no signal to my other two TV's. I hooked the main TV up directly to the sat receiver with an HDMI cable. It now has an amazing picture. For sound, I hooked the main TV to my Surround Sound Amp/DVD Player with an RCA cable. The amp is not HD, but I'm ok with that. I left the coax in place on the main TV should I ever want park cable or antenna reception via the switch box.
I was confused about all of this, as I didn't realize that the HDMI connection would work, even if I left the other connections in place. Then I realized after the first couple of responses, that the TV itself has it's own internal switching system, so the different connections shouldn’t interfere with each other.
Thanks for the help!
