I take them from the boiling water straight to a bowl of ice water. They always seem to peel easily.

My daughter-in-law thinks I'm nuts, but I have always had and used an automatic egg cooker and the eggs are perfectly cooked and easy to peel. The egg cooker is about $30.

This is how I was taught in the resturant business. It works. Vinegar does not work. I too add the eggs only after the water is boiling.

After the eggs have completely cooled take them out and tap them all over so the shell is really shattered, drop them back in the water and do the rest of them as well. Now pick them out one at a time and peel them.

Trivia, why do the yolk edges sometimes turn green?

How do you know if the egg has been hard boiled or is still uncooked?

well I tried the 2" of water above the eggs, baking soda, and then after they were done, took a slotted spoon and put them in a pot of ice water....out of 12..11 peeled really easy. I did try "blowing" the egg out like the guy in the video...but my brain almost exploded and it didn't work LOL!
So I guess that did the trick.....deviled eggs are made...potato salad is made...RV is almost loaded (and now I'm really hungry!)

As for the vinegar...the only thing it does is if your eggs break during the first part of cooking it keeps them "in the shell" instead of running out into the water.

Here is a no-fail way to get perfectly peeled hard boiled eggs:

Put eggs in a pan, cover with cold water. Cover and bring to a good rolling boil. Turn off burner (I have an electric stove, may need to cook longer with gas). Let set on warm burner for at least 15 minutes. (I usually cut up the other ingredients for salads during this time.) Drain hot water, let run under cold for a few minutes. When you can handle the eggs, roll them on your counter, making sure the ends are cracked well. Return to cold water for a while.
With colander underneath to catch shells, begin to peel under a stream of cold water. The shell come right off and you have perfect eggs! This has worked for me everytime.

Interesting--I learned this from my non-cooking DIL, she and I have a good laugh every time we have HB eggs!

this is what works for me too. I boil them for two mins then turn stove off and cover for 20 mins, then rinse in cold, ice water. Peel immediately under running water. I found that if you refridgerate the eggs in the shells...they do not want to peel later. Peel them before you refridgerate them and it is much easier. oh yeah...we put salt and vinegar in the water!! works for us.

Yep. To avoid green edges be sure to immerse the eggs in cold water and keep running cold water on them until they are cool. Never a green edge.
