My cousin is a fireman. He RV's all the time with a 30 ft. trailer. He leaves the frig. on propane while underway. He's says the risk is minimal. I asked him about a collision. He stated that in that scenario, the danger is from a ruptured tank or line. It doesn't matter if the frig is on. Run away.
Personally, if we're talking about a short trip of one to two hours, I see no reason to leave the frig on. Longer trip, with ice cream in the freezer...different story.

I travel with the propane on. I have only made short trips thus far so I make sure the gasoline tank is full before departing. (No fuel stops)

Gasoline fumes are more explosive that propane, do you drive with the gas off?
Propane powered vehicles don't turn the propane off either!
Your RV propane system is designed, built, tested and certified to be left on while traveling so we do!

ALL the owner's manuals say that, The RV-Safety institute says to turn off the propane when driving. The Insurance industry says to turn off Propane when driving.
The reason is heaven forbid an accident rupture a propane line....
However.. Most of the folks I know drive with propane on.
And I've yet to hear (in several years of forum usage) of a RV fire following an accident that could be blamed on the propane.
The one thign I have heard of is refrigerator fires that can happen while you are crusing down the road propane on.
So, Understand these fires are usually due to either a fault in the constrution or design or instalation of the fridge or lack of maintenance... Thus THEY WILL HAPPEN, sooner or later. by driving propane on you catch fire in a place where other drivers, seeing the flames, can keep clear. Thus your rig is damaged, perhaps totaled, but.. No collateral damage
I've also read several reports of a fridge catching fire at a rally or other event when rigs were parked so close together you could not put an awning out.. Not only was the primary rig totaled but the two next to it and in some cases one or two next to them.
So.. Would you rather destroy your rig by having the fridge catch fire on the road
Or 2 or 3 others by doing it at a rally?
I drive with the propane on

I always turn my propane off. I put a couple of those blue frozen paks in the freezer section and a couple in the icebox section and have driven all day without any problem of "anything" melting.

Whenever I travel with my LP on and turn the switch on the fridge to LP it stays on momentarily but then begins to blink, is that just telling me its working? cause normally when you see a blinking light it means no worky.
