First off, I thought I'd start a new thread with this question rather than join in on another and have my question get lost in the shuffle.
So here goes.......I understand that switching out my interior lights with led's will work no problem when running on battery, but what about when I'm hooked up to 110 shore power? Will this just fry the led's or what?

Your 12V lights are independent of the shore power - they will be fine!

Even when hooked up to shore power...all your 12v apparatuses (lights, etc.) operate on 12v through the battery and converter. You will be fine.

Try switching one fixture to LED to see if you like it before going all in. The light they put out is less bright than regular bulbs and is a much different color. Some people including myself do not like them.

The lights and everything else that requires 12 volts runs off the battery and if connected to shore power the converter is charging the battery so you will be fine.

I'm with you, hwybnb - I just don't like the bluish tone of the LED lighting, the uneven light distribution, or the cost. For the cost to retrofit an entire rig's worth of light fixtures to LED I can upgrade my battery bank to more than make up for any energy savings (and have all that extra power for other uses because I rarely have more than one or two lights on anyway ...).
Just my $0.02.

First let me say that I have not switched to LED's but I'm considering it. There was another recent thread that included basically your same question. There appears to be some LED's that can't handle the higher voltage when you are plugged into AC power and your converter is charging your battery at higher than 12 VDC. As I recall, it was mainly one manufacturer that was having problems. If I come across that thread again, I will give a link to it but if you search on LED's you'll probably find it.

Two suggestions...
Replace the "weak" OEM bulbs with halogens.
Retrofit to 12 volt flourescents.

LEDs are avialable in various volt ranges, colors and light patterns. I shopped around and found LEDs that suited my needs. That being said, LEDs are not for everyone (just like any other mod).
