I often take along stuff for subs on hot days when we are camping. Put everything out and have everyone build their own, no fuss no muss. No cooking!

Another vote for wraps, we started making them on the boat as they are easy, and now they are a regular part of our menu.

A meat and cheese deli platter, served with small breads and crackers works well. Tortilla wraps are good & easy to make too.

I got this recipe years ago from my "Taste Of Home" Cooking magazine. I cube up the cataloupe and toss with the rest of the ingredients and serve it in bowls. You could make this dish at home and bring it along.

Chicken Cataloupe Salad

2-1/2 cups cubed cooked chicken
1 cup thinly sliced celery
1 cup green grapes
2 tablespoons minced fresh parsley
1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon cider vinegar
1-1/2 teaspoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon pepper
4 cantaloupe rings (or cube up your cataloupe)
Toasted sliced almonds

Directions:
In a large bowl, combine chicken, celery, grapes and parsley. Combine the next seven ingredients; mix well. Pour over chicken mixture and toss. Chill for at least 1 hour. To serve, place 1 cup of chicken salad on each cantaloupe ring; sprinkle with almonds. Yield: 4 servings.

This is also a recipe from "Taste of Home" I haven't tried it, but it sounds good. I bet you could substitute cooked cubed chicken instead of tuna if you wanted, for a nice hearty cold main course dish!

Tuna Pasta Salad

1 package (7 ounces) small pasta shells, cooked and drained
1 can (6 ounces) tuna, drained and flaked
1 large carrot, shredded
1/4 cup chopped onion
3/4 cup mayonnaise
1/4 cup milk
1 tablespoon lemon juice
2 teaspoons prepared mustard
1 teaspoon dill weed
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
In a large salad bowl, combine pasta, tuna, carrot and onion. Combine remaining ingredients; whisk until smooth. Pour over pasta mixture; toss to coat. Cover and refrigerate for 1-2 hours. Yield: 4 servings.

She knows I can BBQ a "mean steak".

We just want to keep things low key and less hassle Thursday camping since we have plans leaving camp Friday morning. We have all day plans that day and are going out that night. BUSY BUSY BUSY - but fun!

Thanks for everyone's ideas. There is a couple I am leaning towards and may use some other ones in future campouts.

As I read your post, I said to myself, "BLTs!". Pre-cook the bacon, pop into a zip lock. Prepare the lettuce (wash and trim, wrap in a damp paper towel) and tomatoes (slice and wrap). Portion out some mayo. What an easy, refreshing summer dinner. Of course, accompanied by a nice bottle of wine...that goes without saying...

Hmmm, BLT's are a good idea. I don't think we will consume wine but I bought this cordless blender at Walmart for 30 bucks to fix her favorite ice drink, Pina Calada's. We will be dry camping.

We also do the BLT's as well. I make extra bacon in the morning when I make breakfast and put the extra in a ziplock bag and keep in the frige and then just pop in the microwave for a few seconds to reheat for lunch time.

Well, we ended up making cold cut sandwiches (ham etc) plus some macaroni salad with potato chips. The hosts of the camp out ordered 100 chicken wings so we had enough to get our belly's full that night. A great time was had by all. Thanks for everyone's suggestions.
